Corn and Black Bean Salsa in Avocado Cups

For my family, the Superbowl is usually an excuse to sit in front of the TV and eat
My son loves Buffalo Chicken dip. Even though I wasn't planning to make it, he cobbled some together using thin sliced chicken lunchmeat, bits and pieces of cheeses, and salad dressings. And Frank's Red Hot® sauce, of course. (There's no relationship to disclose--I buy it because I like it.)
My daughter--well, I can't say she loves guacamole, though she certainly likes it. Making the guacamole became her job after she needed to give a speech in Spanish class and decided to demo how to make guacamole. Yes, the apples do not fall far from the tree. :)
My spouse will eat anything, but he loves Slow Cooker Salmon Artichoke Dip and I love him, so I whipped him up a batch. I had an ulterior motive, however--a big slab of salmon and a desire to have leftovers for this.

My new item was this Corn and Black Bean Salsa from Kate at Diethood. I didn't have everything her recipe called for, but it was super easy to chop all the jalapeño, red onions, and cilantro for my daughter's guacamole and Kate's corn salsa at one time. Since my New Year's Resolutions involve adding more avocado to my life, I served it in avocado halves and it was delicious.

Corn and Black Bean Salsa in Avocado Cups
Ingredients
- chopped red onion
- chopped jalapeño pepper
- chopped fresh cilantro
- cooked black beans
- corn kernels (mine were thawed from putting them up during summer)
- lime juice
- salt
- olive oil
- avocados
Instructions
- Refer to Kate's recipe for the specific amounts.
- In a large bowl combine all the vegetables except for the avocado.
- Toss with the lime vinaigrette.
- Serve in avocado halves (slice a little off the bottom if you want them not to slide all over the plate, or pop them in a bowl and mash the heck of out them with a fork before eating.

It doesn't matter to me what happens in between commercials. With food like this we totally scored. So did the composting pigs. They loved celebrating the Superbowl with cilantro stems.

Yum! This looks fantastic. I love all those flavors, so I'm sure I'd enjoy this. You're lucky you still have corn from the summer. Ours is long gone.

DeleteI think the only reason I've got corn from the summer is that my spouse was deployed and both kids are in braces--so I cut most of it off the cob and froze it before we could really gorge on it (we were gorging on all the stuff that wouldn't keep as well). I am glad, though, to open the freezer and take out a bag of corn. What a treat!

I was already please with your salsa served in an avocado and then you went and put it on a grilled cheese sandwich. I swooned and then I face planted hard.

I have several black bean salsas that I use on salads, but it never dawned on me to use it in an avocado...pure genius! I will definitely give this a try, and the grilled cheese as well. ;) YUM!

It probably goes without saying that this is completely up my alley. I'm almost drooling over here! I discovered the whole avocado boat thing a few years ago when I made a lightly dressed and somewhat spicy crab salad and filled avocados with it. It was love.

DeleteEat a whole avocado . . . um, half . . . seems positively decadent to me. Apparently I don't get out much.
Thanks for your kind words about Quartz--for a week in September we had 5 critters, then suddenly one Saturday morning Quartz became sick and died. Crystal is doing a surprisingly good job of composting, and we have no plans to get her a friend at this time. I know pigs are social--but she's the belle of the living room and gets quite a bit of attention from all of us.
I have to be honest Kirsten - I don't care much for sports. I like soccer a lot. And baseball as long as I get to sit in the stands and drink cheap beer and eat hot dogs (they're my junk food weakness. along with donuts). BUT.... I'd definitely sit through a football game if you gave me a pile of your stuffed avocados! More black bean salsa! YUM!

DeleteI'm finding the one sport that I really enjoy spectating is sled hockey. It's possibly because I get to yell and unleash my inner Hockey Mom, possibly because my son plays sled hockey, and possibly because it's fun to watch. Though I never eat while watching. The occasional Tim Hortons hot chocolate and a sour cream Timbit aside, that is.

UM...yum!! That salsa is killer, but over the top with the avocado. This is something I would replace an entire meal for!
