Wild Violet Muffins with Wild Violet Sugar #MuffinMonday


Tender light muffins sweetened with wild violet syrup and sprinkled with wild violet sugar. Edible flowers baked into a Spring floral treat.

About the only thing worth foraging in my yard these days are violets.

The garlic has woken up from it's deep winter slumber though it's nowhere near harvesting. The chives and raspberry canes are just beginning to stir. Some red leaf lettuce and celery from the compost miraculously survived the winter and is peeping up from a raised bed--though I suspect bunnies might nibble it off.

I'm pretty much over playing with the Strategic Winter Squash Reserve, and I'm sick of eating down the put up vegetables in the freezer and pantry before we move. I want to forage with something fresh.

Wild violets it is.

With just 15 minutes of pressure cooking + natural pressure release time, you'll make enough to enjoy a hearty home-cooked breakfast every day!

This recipe came about because my son moved into a campus apartment with his Instant Pot, because I'd stocked his freezer with a Costco box of Jimmy Dean Breakfast Bowls, and because one of his roommates does meal prepping.


He developed the basic idea on his own during the fall semester. I thought of ways to streamline the process. Over winter break we put our ideas together and came up with this recipe. This recipe is a copycat version of Jimmy Dean Breakfast Bowls and Jimmy Dean Meat Lover's Breakfast Bowls.

To me, this Finnish Oven Pancake is the perfect Snow Day breakfast. It's made with common ingredients (eggs/flour/butter/milk) and it takes a while to bake--something I wouldn't normally do on a busy weekday morning.

Do you need a recipe to use up some eggnog?


During the holiday season I have eggnog on hand so I'll switch things up and make this using eggnog for a special treat. Try it with any flavor of eggnog you've got!

You may know this as a Dutch Baby, but I've seen many Dutch babies (Thomas and Emily come immediately to mind) and while I'd love to nibble on chunky baby thighs, they didn't look a thing like this.

Welcome back to my Instant Pot on Campus series! I created this recipe series to help my son learn some basic recipes for when he heads back to school armed with an Instant Pot electric pressure cooker. You can see my inaugural IPOC recipe, Spaghetti and Meatballs, right here.


Each of the Instant Pot on Campus recipes will have several things in common. These recipes use a small number of ingredients and have easy prep. I'll walk you thru what to buy at the store, what you'll need in the kitchen, what could go wrong and how to fix it, and how to Level Up when you're feeling fancy.


In today's recipe we're going to cook two building blocks--hard boiled eggs and roasted potatoes--and combine them in various ways to make a variety of meals. This Instant Pot recipe works for vegetarians and omnivores alike.


What to buy at the store

These ingredients are handy to have around because they keep well. If you only grocery shop once a week, use this as your go-to meal the day before you shop (kinda like your 'I'm doing laundry' outfit).
  • Eggs (up to a dozen)
  • Small potatoes (up to 3 pounds waxy Yukon or redskin type--NOT russet)
  • tortillas
  • cheese (cheddar or colby jack works great)
  • Tabasco or your favorite hot sauce

I generally get my eggs from the local coop which means I'm getting whatever size the chickens are laying, but anywhere from Medium to Jumbo will work in this recipe. The larger the egg, the longer you may wish to cook to achieve a chalk-like yolk.


As for potatoes, the smaller the better works best in this recipe. You will not cut the potatoes before cooking, so choose egg-sized or smaller potatoes to make sure they are fully cooked.

If you've got a box grater, a block of cheese is generally cheaper per pound than a bag of shredded cheese. However, it's a timesaver just to open a bag and shake out what you need. Your choice! Same with tortillas. If you prefer breakfast tacos, get a smaller corn or flour tortilla. If you've got a bigger appetite, get the burrito-sized tortilla.

Strawberry Banana Muffins #MuffinMonday

You know how seeing one of those cooking videos ignites a craving? That's what happened here. I kept seeing a video for strawberry banana bread in my feed, or strawberry banana smoothies at the store, and the next thing you know I've got a hankering to make Strawberry Banana Muffins.

Conveniently I had fresh local strawberries from the farmer's market and ripe bananas on hand, plus the the endurance to make muffins. You see, while we're mostly unpacked in our new home, very little is set up exactly how it's going to stay. That means every time I cook something it involves finding the right ingredients, locating the proper tools, and doing a lot of  'hmmmm . . . this would work better over there, which means I should move that to this other place, and stick that other thing in a pile by the stairs to figure out where its new home will be . . .'.  It's the standard dance of the military family in a new place--finding the best way to arrange our stuff to quickly make a house into Home.

Ever look at something familiar with fresh eyes and see it in a whole new way? That happened to me with this recipe. Each month I join the Muffin Monday bakers to bring you an original recipe using seasonal ingredients. When I saw Karen's Blueberry Muffin Top recipe, that she comprehensively baked on a cookie sheet in addition to her muffin top pan, I started thinking . . .
Why do I have to bake my muffins in a muffin pan?
What if I make a muffin batter and just scoop it out onto a cookie sheet?

I did it. The world did not end.

Since I cook and bake using the ingredients from my Community Supported Agriculture (CSA) farm share, I've got local apples and my "cook's portion" of Slow Cooker Apple Butter in the fridge. I decided to #usethedamnjamalready and make an apple butter flavored muffin top with chopped apples for grins and giggles. Sweet Potato Casserole Muffins #MuffinMonday

I like to make festive muffins using the seasonal ingredients from my Community Supported Agriculture (CSA) farm share. One of the reasons I enjoy participating in Muffin Monday is the creative stretch to come up with something new each month. When I made these muffins last winter, I carefully hoarded the recipe in my Mobile Office until sweet potato season returned. Now that my farmers' sweet potato crop has been dug and is curing, I'm glad to share these muffins with the Muffin Monday crowd.

As I think about my favorite recipes using farm fresh ingredients, I'm realizing how often I feed my family muffins.  Muffins for breakfast.  Muffins for after school snack.  With dinner.  Muffins to school or work or social functions.  Pretty much if there's an occasion to bring food, I've probably made muffins.  In addition to this recipe, you can find all my muffin recipes, from Apple Cider Forgot the Sugar to Zucchini Nutella,  to your right in desktop view, or  down below in mobile view----> in my Recipe Index by Category.

I get this desire to feed the world muffins from my mom.  She has a couple of friends from school who made a muffin cookbook (Amazon affiliate link) that I refer to when I feel like making muffins but need inspiration. My current favorite muffin recipe, though, is cobbled together from my experiences making these waffles, these muffins, and always having buttermilk on hand. I love these muffins because they are whole grain, not too sweet, but have a little hit of chocolate that makes the kids think it's a treat. I've played with many iterations of this muffin base, using soaked oatmeal, but this recipe is the one that started it all. For Muffin Monday today, I've gone back to the beginning.

I know lately it seems that the switch has been flipped to All Things Pumpkin, and I am not usually one to jump on bandwagons, but my reason for using pumpkin is simple. I've got a lot of volunteer pumpkins on hand this Fall.  The garden has been crazy productive, thanks to the squirrels planting pumpkin seeds everywhere and my inability to deny food the right to grow wherever it shows up. As I type this, the peaches on my daughter's tree are plentiful but not yet ripe. However I often work a year ahead, so I'm going to share a recipe from my son's birthday/graduation trip to see Space Things. Last year we passed thru Georgia en route to/from the Space Coast of Florida. I picked up peaches and pecans on the way down, and then more on the way home. We love peaches.

Next I heard about The Peach Truck and bought a case of Georgia peaches in a local hardware store parking lot. [Note--I was at work on the day the truck was due and a friend picked up my case for me.. Full disclosure.] The peaches weren't yet ripe, so I bided my time before I could make my Peach Salsa.

It's good to have a skill in your kitchen repertoire that can be manifested in a variety of ways throughout the year. This recipe is an excellent example of that. The technique of braided 3 strands of bread dough is a simple one to master, and once you've got it down you can turn out an infinite array of breads for nearly any occasion. [As I type this, my brain is thinking towards savory routes.] I learned how to braid bread while living in Finland where I made a cardamom-spiced version called Pulla  [poo-lah] (you can find my Finnish Pulla recipe here).

Sometimes I get creative before I start braiding the dough. I've flattened and spread ropes of dough with caramel pumpkin butter before braiding to make a Caramel Pumpkin Butter Stuffed Braided Bread.
I've gotten creative using Community Supported Agriculture (CSA) farm share vegetables to naturally color the dough for a tricolor Mardi Gras Bread using purple sweet potatoes, orange sweet potatoes, plus matcha green tea powder to make the traditional colors in sweet bread form.

The basis of this bread is a sweetened, enriched dough. My sweet potato bread dough recipe was inspired by the Overnight Sweet Potato Monkey Bread in Donna Currie's book Make Ahead Bread. When you make dough using vegetables the moisture content varies widely depending on the age of the vegetable and the amount of rainfall during the growing season, so it's important to be familiar with how an enriched dough should act/feel/look like. If you've never baked bread I would not recommend diving into this recipe. I'd suggest you start with the Pulla to get the hang of it, then branch out to incorporating roasted sweet potatoes into your dough.

For this recipe I wanted to expand on the sweet potato dough concept with complementary flavors. I chose pecans and brown sugar because that's my favorite way to eat sweet potatoes. I've made this bread several times, with several variations. I've got a bunch of notes, so do be sure to read through before embarking on your baking session(s). You can be as elaborate as you want, using 3 types of dough to make 6 loaves of multicolored purple/orange/brown bread. You could simply make a single batch of orange sweet potato dough and make two loaves of bread. Add in pecans or leave them out as you prefer. Sprinkle on maple sugar or use turbinado sugar as you prefer.  This recipe is pretty forgiving, and the dough can be stored in the fridge for several days or frozen for several months.

I like to celebrate holidays with food, even if it's not a holiday I claim as my birthright. I'll make Pumpkin Cranberry Maple Kugel even though I'm not Jewish, and Corned Beef, Cabbage & Dubliner Pizza although my People went a viking to the Emerald Isle then returned home to Scandinavia. It's fun to celebrate with food, especially colorful food. Recently I shared an attempt at green muffins that did not work out exactly as I'd hoped--even if they were tasty!

One surefire way to have naturally-colored baked goods is to make the dough ahead of time, letting it rest in the fridge. This allows the color to deepen, and has worked for me with several Community Supported Agriculture (CSA) farm share vegetables. It seems, in my experience, that a cooked vegetable as part of the moisture for a yeasted dough results in vibrant breads. My two favorite examples, so far, are my three color Mardi Gras Braided Bread and my bicolor Overnight Sweet Potato Pecan Monkey Bread. Today's recipe is a fusion of those two--taking the green matcha dough from the Mardi Gras bread and baking it in the manner of the monkey bread. I kept up the green theme by using pistachios in place of pecans, but this recipe remains inspired by the book Make Ahead Bread by Donna Currie.

Healthy Tiramisu Muffins #MuffinMonday

Let's get one thing straight off the bat--there are no ladyfingers in these muffins. This is not the traditional Italian dessert made individually in muffin cups. It is Muffin Monday and I had the idea to take some tiramisu ingredients (namely mascarpone cheese, espresso powder, and chocolate) and bake them into a muffin. I got these ingredients after our local grocery store finished their Taste of Italy promotion and everything was marked down. Half price imported espresso powder and mascarpone cheese? I'm so in.

I like my baked breakfast goods to be on the healthier side, however, so I chose to make these with white whole wheat flour. Even though I prefer less sweet muffins, what with the chocolate chips I opted to go big and bump up the sugar a bit from my standard ¼ cup up to ⅓ cup for the dozen. I mean, this is definitely a treat. I was thinking these could be a sweet start to a Valentine's Day celebration.

The BLUF (military acronym for Bottom Line Up Front) is this is a quick sweet fruit & nut bread that happens to use a pound of pork sausage. Meat and fruit in bread? It sounds crazy--but recall that mincemeat originally contained meat. Honest--you gotta try it! This recipe comes from Ruth Runyan of Oakview Farms. She and her family have been raising hogs in Urbana, Ohio for going on 4 generations now. You can read about my visit to Oakview Farms here. In this post I share how 3,500 Ohio farms raise enough pork to feed 25 million people. That's more than double Ohio's population, but these good folks share with plenty of other states. When you buy pork at the grocery store or farmers market, you are supporting Ohio farm families! (Hey thanks for eating locally and supporting local businesses. It's kind of a thing of mine.)



I was intrigued by the idea of using savory sausage in a sweet bread. After all, I like maple syrup on my breakfast sausage, bacon in my Maple Peanut Butter Bacon waffles, and I have been known to do "quality control" testing on the honey bacon at work. Sweet and savory just goes together. In addition to a hearty breakfast option, this bread can be served as a side dish (like I first tried it, with Perfect Grilled Pork Chops). I suspect it would make a terrific stuffing or dressing alongside a holiday meal. I bet you could even stuff thick cut pork chops with this bread! No matter what your application, it's an unusual recipe to add to your repertoire. Golden Beet Muffins with Caramel and Chocolate #MuffinMonday

These decadent muffins owe their golden hue to roasted beets. Take them over the top with chocolate chips on the inside and a caramel drizzle. Eating your beets for breakfast never looked so good!

I'm used to getting scarlet beets in the farm share. For years I've been searching for recipes that will entice my family while using up the beets from the Community Supported Agriculture (CSA) farm share. I've tried sweet and savory preparations with mixed results. One thing that is consistent is that beets + chocolate go well together in a sweet baked good, but sometimes the vibrant color (found in nature--no dyes necessary) is off-putting. Other times, like in my Cocoa Beet Chocolate Chip Muffins, it can really look cool.

When I opened up the farm share box to see a bunch of golden beets I was delighted. Now, maybe I had a chance to remove the shocking pink aspect of the beet dishes from the equation, and just let the earthy-sweet flavor of the beet work its magic.  I roast beets wrapped in foil (scrub them good but don't peel, drizzle with a bit of vegetable oil or water so they steam) in a 400 degree (Fahrenheit) oven for 45 to 90 minutes or until tender when you squeeze the foil packet. After that you simply slip the skin off the cooled beets and you're ready to use them however you like. Roasted beets will keep in the fridge for several days and can be frozen for several months, though when you thaw them I hope you don't want lovely slices as the plant cell walls will have burst during the freezing and they'd rather be smashed into puree.

When the weather cools off I'm ready to make up a pot of soup. Seeing folks' soups simmering on Instagram compels me to head into the kitchen and make some soup for my family. Usually I open the fridge and see what farm share produce needs to be used up. I think all great soups started out that way--with whatever was on hand--and it remains my go-to method for soup making.  Using flavorful ingredients (stock instead of water, sausage instead of unseasoned meat) are a couple of shortcuts to a warming, filling, and enjoyable soup experience.

In the past I've shared several soup recipes. My Spicy Corn and Sweet Potato Chowder remains perennially popular on Pinterest. (No charge for alliteration). The Six Ingredient Spicy Mustard Greens and Chorizo Soup was my first time using sausage for double duty--as both a seasoning and a protein--a short cut I now use often while cooking for my family. When we're feeling under the weather, my Thai Turkey Cold-Busting Hot & Sour Soup is just the ticket. And underpinning all of these soups--stock. Doesn't matter if it's chicken stock or vegetable stock, using the scraps left from the farm share and turning them into soup stock is just plain Frugal, Eco, Farm Fresh Feasting. Or so I coined it 4 years ago.

I keep a bag in the freezer and each time I chop carrots, onions, or celery--the tops, tips, peels and or skins go into the bag. Mushroom stems if I'm making beef or vegetable stock. Then I add some bones (for beef, turkey, chicken or ham stock) and I've got the beginnings of a great soup.  In fact, I picked up chicken necks and backs at the farmer's market recently and my next 'day off project' will be to simmer a big ol' pot of chicken stock.

Healthy Breakfast Cookies

Each school year starts with such promise--we will have LESS clutter, lose LESS papers, be MORE organized, waste LESS food and LESS time, be MORE productive, etc etc. You know the drill. The inspiration of those blank planner pages soon fades into the daily grind of getting up and out the door with everything you need for the day Oh-and-by-the-way-mom-did-I-tell-you-I-needed-a-solid-blue-shirt, shorts, and-socks-and-this-specific-brand-of-index-tabs-by-3rd-period?

Sigh. I can't help you with that brand of index tabs [it's a thing you stick onto a piece of paper to make it into a divider. I had to look it up]. We went to 4 drugstores and office supply stores to amass sufficient quantities for the classroom stash. [Should have ordered online.] But I can help you put something nourishing into your folks' bellies to get the day off to the good start:

My working title over the summer months while I was making test batches was As Healthy As A Bowl Of Oatmeal Breakfast Cookies, because that was my goal:  a breakfast cookie that had all of the nutrition of a bowl of oatmeal but in handheld form.


My search started when I wanted to encourage my son to keep up his oatmeal habit during summer. Some people [my spouse] can start their day with a hot bowl of oatmeal year round. Not me. I like to mix things up. I figured I'd grab a Breakfast Cookie recipe and whip up a bunch one day for breakfasts throughout the week. If you've followed the blog and seen how I make muffins with LESS sugar, LESS fat, MORE fiber and MORE flavor--you can guess what happened next.

I kept finding recipes for breakfast cookies that were Cookies with some oatmeal and orange juice tossed into the dough. Cookies--starting with creaming butter and sugar. Not the building blocks for breakfast in my house! Please do not misunderstand. I love cookies, and a good cookie recipe starts with creaming butter and sugar. But that's for dessert. Not for breakfast. Each has it's time and place.

I went back to the drawing board and thought about how, when I soak oats in buttermilk overnight for my muffins, the resulting mixture is pretty darn thick. I experimented with turning that into a baked handheld breakfast item. Each batch became better, but missing the essential sweetness until I hit upon frosting them. I used maple spread from my farmer's market and whoo boy did that do the trick! If you cannot find maple spread I'd suggest making your own (see Note below) or using peanut butter, apple butter, or Nutella.

Note: this recipe starts the night before when you combine oats and buttermilk (or kefir). You can soak them in a bowl on the counter or in a container in the refrigerator. If it's hot out I use my fridge.
Note about maple spread: I get this from my maple syrup dealer at the farmer's market. It's a refrigerated item that is pure maple syrup cooked down even more into a thick spread. Update: Here's how to make your own Maple Cream (video).


Healthy Breakfast Cookies (makes 12, we eat 2 at a time)


Ingredients



  • 2 cups rolled oats (old fashioned kind)
  • 1+¾ cups buttermilk (my friend used kefir with excellent results)
  • ¾ teaspoon salt
  • ¾ teaspoon baking soda
  • 2 Tablespoons ground flax meal
  • 1 egg
  • ¼ cup peanut butter (if you need to add sugar, I'd suggest ¼ cup here)
  • ½ cup raisins or chopped dates
  • ½ cup chopped nuts (optional)
  • ¼ cup roasted salted sunflower seeds (optional)
  • ¼ to ½ cup shredded coconut (optional)
  • ¼ to ½ cup mini chocolate chips (optional)
  • maple spread (in my opinion NOT OPTIONAL, but substitute peanut butter, apple butter, or Nutella if you cannot locate maple spread--see Note above)


Instructions


  1. The night before you want to bake these cookies, combine oats and buttermilk in a bowl. You can leave them out on the counter or refrigerate them. Your choice. 
  2. In the morning, add the salt, baking soda, flax meal, egg, peanut butter and raisins. Stir well, and let it sit on the counter for an hour.
  3. Preheat the oven to 350 degrees Fahrenheit and use sheets of parchment paper to line 2 cookie sheets for best results (I found that the cookies will fall apart if you merely grease a cookie sheet, but they stick together until cool when using parchment paper).
  4. Stir in the optional add ins (nuts, sunflower seeds, coconut and/or chocolate chips).
  5. Scoop large cookies, about ½ cup size, onto parchment paper-lined cookie sheets. Flatten with the bottom of a drinking glass, a spatula, or the back of your cookie scoop. These cookies don't spread out.
  6. Bake in preheated oven for 20 to 25 minutes until lightly browned. Cool on the cookie sheet for 5 minutes, then transfer to a cooling rack to finish.
  7. Frost with a dab of maple spread. It will dry so that the cookies can be stacked. Store these cookies on the counter for a day, in the fridge for a few days, or wrap up and freeze for a few weeks.

What gets you going each day? Besides the caffeinated or decaf beverage of your choice, I mean. What powers you through a busy morning? Gives you energy to tackle a big To Do list without stopping to sit down and have a meal?


For me, it's a smoothie. As I'm getting ready for work I dump a bunch of real, actual, recognizable foods into a blender, add some ice, and hit the power button. After a few moments I'm pouring a tasty and nutritious drink into my cup and I'm ready to hit the road. Yes, I'm also armed with a couple of jars of my DIY Iced Chai Tea that I'll turn into Iced Chai Tea Lattes at work. Gotta keep the fluids going!

My smoothies aren't just for breakfast. This recipe makes about 5 cups, which equates to one giant cup for me to take to work plus a pint jar leftover in the fridge. I use these plastic storage caps (Amazon affiliate link) which fit on my canning jars and are much handier than a metal lid & ring for repeated access to the jar.


Who drinks the leftover smoothie? It depends. This smoothie is the perfect pick me up for my spouse after he bikes home from work. It's cold, refreshing, and hydrating as well as providing him a burst of sugar and protein to recoup what his muscles used on his commute.

When the weather turns to warm days with cold nights my thoughts run like sap straight to maple syrup. I get my jugs of locally-harvested maple syrup at the farmer's market and, to paraphrase the little old lady in the hot sauce commercial, I put that $%^! on everything.

I've shared muffins made using maple syrup, like my Healthy Morning Glory Muffins,  Winter Squash and Banana Muffins,  and {No Sugar} Carrot Cake Muffins.  I've used maple syrup in desserts, like my Pumpkin Cranberry Maple Kugel (although this makes an awesome breakfast) and Maple Doodle Cookies. I've even used maple syrup to sweeten up savory dishes like Maple Teriyaki Salmon Sushi and my Red Cabbage, Leek, Brat and Beet Skillet Supper (aka Hot Pink Mess) and in my morning Orange and Beet Smoothie. I'm a big fan of real maple syrup from local producers.

Three different stores for these ingredients--the local grocery, the farmer's market, and The Christmas Tree Shops (because where else do you buy peanut butter but The Christmas Tree Shops?).


When the maple syrup jug is brand new I tend to be quite free and easy with my syrup. Only towards the end of the jug do I get a bit stingy, but I am fortunate to enjoy a year round farmer's market so a new jug is just a Saturday morning trip away.


I didn't intend for this to be my second Friday Waffles with Meat post in a row, but I guess it turned out this way. At the beginning of the year I looked thorough the previous year's unblogged photos and jotted down recipes that would be suitable on each page of my monthly editorial calendar. [Sounds fancy, but I just printed off some calendar pages with boxes big enough to write in.] When I sat down yesterday to plot out my March recipes, these waffle photos spoke to me the loudest. Always listen to the waffles. I put them down first. Only after I looked at my recent posts did I realize that a mere week ago I posted my Corned Beef Hash Brown Waffles.

Other waffle recipes I feel like pointing out on the blog are my Butternut Squash Waffles, Overnight Yeasted Carrot Waffles, Eggnog Sourdough Waffles, Banana Blender Waffles, and Chocolate Zucchini Waffles. Yes, we eat a fair amount of waffles around here (and leftovers become school day breakfasts) because it's easy to make a few rounds and then call everyone to the table so we can sit together and enjoy breakfast.

Though that doesn't always happen when you have sleeping-in teens and a hungry, early-rising spouse, so sometimes we eat in shifts.
