When I was gathering garlic scape recipes I came across this Grilled Crostini with Garlic Scape Cream Cheese and Tomatoes from Kim of Kiss My Smoke. Her recipe reminded me that I hadn't tried making a savory cheese spread using farm share ingredients.

This is not that spread that my kids keep asking me to make--I think I need to use some ricotta and more pepper to make it a bit drier/firm it up, to come closer to Boursin, but much more testing is needed. Rule #3, something to look forward to.

Why do Father's Day foods have to be all red meat? Dads may enjoy a nice piece of fish for a change.  A healthier swap--especially with so much flavor--is a welcome addition to a summertime table. Plenty of vegetables never hurt anyone, so sharing the limelight with a fresh seasonal vegetable makes good sense and is good for you as well.

Easy Artichoke Arugula Pesto Burrata Pasta

A fast-to-fix vegetarian pasta dish using farm share greens, marinated artichokes, and creamy burrata cheese. Putting up pesto is one way I keep from being overwhelmed when the farm share greens are in abundance.

I forgot to take finished, plated, photos of this dish. I also had the grill going and it just slipped my mind. I debated sharing this recipe today, seeing how it's the first day of the the farm share season and I had the potential for new and returning readers arriving on the blog and did I want to start off with less than my best foot forward?

I decided that I did. Hope you understand!

When we get a Community Supported Agriculture (CSA) farm share box filled with assorted greens I am emphatically not looking to throw them all into salads. There are only so many salads we can eat in a week. Instead, I'm looking to turn anything not expressly salad-like into a recipe ingredient, and I give myself bonus points if it becomes a long-storing ingredient. I've shared a concept recipe for incorporating farm share greens into pasta dishes here, which is a terrific quick use for a bunch of greens. If you've got a bit of time to do some prep work, though, you'll be reaping the benefits for months by putting up some of your greens as pesto.

Arugula pesto fits the long-storing ingredient category--typically we're getting arugula in the farm share side by side with a bag of salad greens and other cooking greens. It's useful to be able to put up a batch of pesto. I store mine in the freezer in half pint jars, with a splash of olive oil on top, using these terrific lids (Amazon affiliate link). I don't just want to share how I put up this stuff, though--I want to show you how I use what I put up.

This pasta dish is my second version of a fast burrata pasta meal. The first one, that I've made three times now [unheard of in my family] uses meat and winter squash so it will debut in the Fall. Oh, so worth the wait. I wanted a vegetarian and summer-friendly version, good for a quick supper, so I took the burrata pasta concept and here we are. Adding in artichokes just elevates a simple pasta dish into a snazzier one, though we are in danger of the kids becoming artichoke fans and eating all the leftovers. The same thing happened to us with take out Indian food, and now my picky eater tells me the spaghetti sauce needs more eggplant. Educated palates. Harrumph.

Burrata cheese was new to me, and my spellcheck keeps trying to change it to burrito. When I first bought it I thought it was just like fresh mozzarella and was sorely disappointed when the creamy center oozed all over my pizza dough. Once I embraced the gooey center I came to appreciate it for what it is (creamy), not for what it's not (solid). I've found burrata cheese at the fancy cheese counter of my local Kroger. It's pricey but perishable, which means whenever I see it marked half off/quick sale I pick it up. [Yes, I cruise the fancy cheese counter looking for magical markdown stickers--I'm married, I don't cruise bars anymore.] I know we'll enjoy burrata pasta dishes so it's worth the splurge--at half price at least.

Szechuan Asparagus with Ma Po Sauce

When you move around a lot, you tend to leave behind more than friends at your last duty station home. You leave behind food--literally and figuratively. In the literal sense, you can't take the contents of your pantry and freezer with you when your household goods are going to spend a month on a boat, nor can you take your Community Supported Agriculture (CSA) farmers or their produce. In the figurative sense you leave behind the ready access to foods you've come to love. I have not been able to recreate the Chicken Schnitzel Melba from Mom's Place in Spangdahlem, Germany, a Leonard's Malasada from Honolulu, Hawaii, nor a plate of Ma Po Tofu and Ma La Wonton from the Great Wall restaurant on Logan Circle in Washington, DC.

However, I can make a dish inspired by the flavors of that last one. [Feel free to contribute to the 'Send This Blogger Back to Germany and Hawaii So She Can Experience Some Beloved Dishes' fund and I'll work on the other two.] I picked up a jar of Ma Po sauce at the Cincinnati Asian Market during sled hockey practice, and added Szechuan peppercorns to my Penzey's shopping list. Coupled with my other stock of Asian cooking basics I was set. Except I didn't really know where to start.

One day at the thrift shop where I work someone brought in a 1970's era Chinese Food Using a Food Processor cookbook by Culinary Arts. As I was tagging it I randomly flipped through and my eye caught the Pork & Bean Curd Szechuan Style recipe. I already knew that Ma Po Tofu had tofu, black beans, pork, and Szechuan peppercorns, so I figured this recipe may be a good place to start. [I should note that I didn't follow that recipe, I just looked at the ingredient list and went off, away from the food processor and the pork and tofu, and did my own thing.]

Today I'm going to share a recipe for pasta with a slow-roasted tomato sauce, and I'll nag you to roast some tomatoes in the Fall. Oh, I mean plant the seed [forget the parasite analogy now] that you should consider slow-roasted as a method of preservation. Slow-roasted tomatoes require an oven, a rimmed baking sheet, and a freezer. I am fortunate to have all 3, and according to the results of the Hunger Study 2014, most folks in my area have access to the same kitchen appliances. No excuses!

Easy Cheesy Vegetable Rice Enchiladas

Another Fast from the Farm Share meal, combining shredded summer squash, peppers, onions and rice for a vegetarian enchilada that is wonderfully satisfying

If it looks like I'm not going to be able to use the vegetables from the Community Supported Agriculture (CSA) farm share in a timely manner--I get busy.  Well, my freezer gets busy. For summer squash, and zucchini, I shred and freeze in 2 cup portions. [I've found once thawed and squeezed dry that the bulk of shredded squash is reduced by half, so if I want a cup I freeze double.] For peppers and leeks I chop into small pieces and freeze on a tray before transferring to a bag for storage. This way I've got vegetables handy year round and I reduce the amount of wasted food that our farmers grow. Yes, I do require an additional freezer--it also serves as a microwave stand so everything fits in my little old kitchen.

While I am capable making my own Slow Roasted Tomato Enchilada Sauce, when I want to get dinner in the oven quickly it's nice to grab a can of prepared sauce, some prepped vegetables, and just get going. I had my daughter cooking the tortillas and my son shredding the cheese while I made the filling. These assembled very quickly. Adding cooked rice to the vegetable mixture gives a nice "chew" factor, which I am sure isn't really a thing, but no matter.  These are delicious.

Antipasti Pasta Salad with Kale and Radish

If it's an Italian faux pas to say "antipasti pasta" I apologize.  All blame belongs to me.  I'm pretty sure that pasta antipasti is clearly wrong, but I'm thinking 'before the pasta-pasta' is OK.  Point is that I'm using traditional antipasti ingredients, combined with fresh spring vegetables, to make a tasty supper. Call it a multitasking meal--you've got your antipasti and your pasta course in one.

You know, I did make a title image for Pinterest purposes.  May as well share it even though I changed the post title after I'd made it.  Dithering--not a good thing after 2 hard ciders!
This is a great 'it's too hot, I don't want to think about cooking dinner' dish, as well as a Fast From The Farm Share meal.  It uses kale, radishes, and green onions from the Community Supported Agriculture (CSA) farm share as well as a swing by your grocery store's olive bar for the rest (no grocery store olive bar? The jarred items keep for a while and are worthwhile to purchase).  If you boil the pasta while you're fixing your morning beverage, you can be out of the kitchen in a flash.
When we moved here we bought a gas stove. [And a house to go with it. In that order.]  Getting the gas line installed took some doing--city permits and all that.  Using an electric skillet, a crock pot, an electric kettle, a toaster and a grill I fixed family meals for weeks.  I learned a cheater way of making pasta salads by buying the fastest cooking fresh pasta and using my kettle to boil the water then 'steep' the pasta for a few minutes.  It was an easy meal our first summer here, and something that keeps the kitchen cool even when the oven works just fine.

I'd been thinking about adding kale to a pasta salad for a while, and when I saw some marked-down olive bar containers I knew I'd go in an antipasti direction.  This would also be great in a more Mediterranean direction, later in the summer, if you got feta instead, and added fresh cucumbers and tomatoes when they are ripe.  The sun-dried tomatoes and marinated mozzarella make such a pretty bowl with the kale and radishes.  If you'd like, add some chopped cured meat or white beans for extra protein.

Greens and Pasta--A Fast Concept Recipe

A concept recipe for quickly getting a meal on the table that your family will eat and using the kale, spinach, bok choy, mustard greens, beet greens, turnip greens or Swiss chard from your farm share.

Would you like to walk in the door after picking up the CSA box and, within a half hour of arrival sit down to eat a tasty meal the whole family will enjoy?  If I haven't yet mentioned it in on this blog [Ha!  As if!], CSA stands for Community Supported Agriculture, a farm share program where you sign up and pay your farmer before the growing season starts in return for receiving a weekly share of the produce during the growing season.  It benefits you because you've met and shaken hands with the people who grow your food, and it benefits your farmers because they are paid in advance--to buy seeds or equipment necessary for the upcoming season (link to a photo of my farmers doing exactly that)--as well as lessening the risk that is independent, diversified, small farming today. Use the Local Harvest tool on the blog to find a CSA near you.
The only drawback to being a CSA member, which of course is why I started this blog, is having a ripe vegetable in your kitchen that you don't have a clue what to do with, knowing that loads more vegetables are coming within a week, and knowing if you don't figure something out--quick!--your money and your farmer's labor are going out in the compost, down the garbage disposal, or out to a landfill. That'd be a shame.
 Since I hate to waste food, and I like to laze about encourage my kids to get busy in the kitchen, this post will be another segment of Cooking with Teens as well as a concept recipe.  I first learned of the term "concept recipe" from my blogging mentor Alanna, and it works here.

You'll need pasta--dried or fresh, thin noodles, shaped noodles, filled noodles all work in this
You'll need a sauce (prepared or put up pesto or alfredo or marinara or vodka sauce)
You'll need greens (beet, chard, kale, spinach, tender collard, mustard or turnip greens)
If you like, you could add a protein (bacon, breakfast sausage, ham, meatballs, paneer, tofu)

Chinese Cabbage and Chicken Roll Ups

This is a good meal to fix if you're serving non-meat eaters as well as meat eaters, as the chicken is cooked separately and could even be left out altogether.


I could call this a faux Mu Shu style dish but I really don't want the Mu Shu Police on my case, so let's just go with this title.  I had a lovely Chinese cabbage, carrots, and onions from the Community Supported Agriculture (CSA) farm share.  Ground chicken was marked down, and I'd made a trip to the CAM International market because was sled hockey season.

When you have nearly all the ingredients for a Mu Shu, why not make something close to it?  To make this Fast from the Farm Share I opted to have 2 skillets going, but if you'd prefer to do fewer dishes and have more time to spend making dinner, have at it.

Orange Teriyaki Slaw Stir Fry with Orange Sriracha Turkey Meatballs

A colorful, flavorful, stir fry of red cabbage, carrot, celery and onion in a fresh orange and teriyaki sauce.  Served with orange-ginger-sriracha turkey meatballs and rice.

This is another Fast from the Farm Share meal, combining Band Fruit Fundraiser oranges and cool weather vegetables in an Asian-inspired stir fry.  Because I had it, I baked ground turkey meatballs flavored with orange, ginger, and sriracha separately and added them at the end, but this orange-sauced stir fry would be terrific as a side with a different protein source.

Working on the savory orange recipes section of my Fall and Winter Fruit Recipe Round Up gave me a hankering for Asian-influenced orange recipes.  Since I like to use what I've got, I opened the fridge and chose a red cabbage, a fat carrot, and the last of the celery for this stir fry.  It's pretty much slaw ingredients--seasoned differently and stir fried. I used ground turkey for the same reason--and because the idea of having my daughter mix, shape, and bake the meatballs appealed to me after a day of hauling fruit in and out of vehicles.

I don't have a juicer--but I have a blender, so I tossed the peeled orange and all of the sauce ingredients into the blender and made quick work of the sauce.  Getting the rice going first, and baking the meatballs while working on the stir fry, means that this meal comes together very quickly.

Fried Rice with Massaged Kale

I'm probably the last one on the massaged kale bandwagon, and I'm OK with that.  Alanna taught me that you could massage olive oil into torn pieces of kale to soften it for a great raw kale salad.  What I took a chance on was the idea of using massaged kale in a quickly-cooked dish--would it work?

I'm happy to share that it does work.  Our fried rice repertoire has now expanded to include kale, and my kids are enjoying kale not only in soup and in pizza dough, but also in fried rice. Green smoothies, too.  Tomorrow, the world! This is huge in my book.  I mean, my spouse and I enjoy every item in our large CSA share, one way or another.  Our farmers are amazing, their land is very productive, and the kids seem to want to eat multiple times a day, so it really works well if I can use the CSA bounty in a way that also feeds my children.  Double win!
