I like to use my Instant Pot to prepare meal components--not just meals. In the summertime that means cooking--and freezing--endless ears of freshly shucked corn, or steaming potatoes for potato salad or my Grilled Garlic Scape Pesto Smashed Potatoes recipe. In the fall and winter that means preparing winter squash and root vegetables.
If you find yourself with an abundance of oddly-shaped sweet potatoes from your Community Supported Agriculture (CSA) farm share, the farmer's market, an ugly produce subscription service or your own garden--try this recipe! It's a terrific way to use cooked sweet potatoes in a simple and satisfying soup.
I am all about inclusion. Is that because I have a disabled kid? Because I love people who are LGBTQ? Because I share meals with folks who have different eating styles? Because I have lived in a country where I was a minority? I dunno. The result is that I strive to make everyone feel welcome at my table.
That doesn't mean I choose the lowest common denominator. My octogenarian house is accessible for my son but not for his sled hockey teammates. I won't plan an entirely meatless Thanksgiving meal for the lone vegetarian at the table--but I will choose vegetable stock over chicken stock in stuffing or in my Silken Turnip and Potato Soup so that more of the dishes on offer are appropriate for the folks who come together to share the meal.
This recipe came about because of two things: my conflicting desires to have a lot of side dishes and a small batch Thanksgiving, coupled with my neighbor hosting her extended family for the holiday and having less control over the food on her table. Her son has a severe dairy and nut allergy, and even well-meaning relatives don't always think it through.
"There's no milk or nuts in these Rice Krispie Treats!" "Did you butter the pan?"
"Yes! Oh . . . I didn't think of that."
Since I was thinking it through, and wanted the challenge of re-imagining a corn pudding without using a box of corn muffin mix, I offered to bring over a dairy free corn casserole for her table.
I figured I could divvy the mixture between 2 dishes so that we'd get variety in our side dishes while she'd get another dish that she knew was safe for her son.
When I make an assortment of cookies, such as for a holiday cookie tray, I like to have a variety of tastes. Consider these as the Rules of a Cookie Tray. There should always be something chocolate. There should always be something not chocolate. There should always be a bar cookie. There should always be Peanut Butter Blossoms. And most important--all of these cookies should be easy to make since you're making so many of them at once.
I got this recipe from my friend Lasar back when we lived in Hawaii. She called them Tasty Raspberry Treats and that's how I always think of them. Since I try and make my post titles a wee bit more descriptive, however, I've renamed them Raspberry Jam Oatmeal Bars because if you're looking for a way to use your homemade jam, this is a lovely one.

She sprinkled flour as she rolled them out. The rolling pin moved lightly in her hands. She turned each lefse over and about, As swirling worlds take shape when God commands.
First rolled up on a stick, and then unrolled; The cookstove added age-spots to each side. Once done, they were removed for us to fold; A simple task that we performed with pride.
Each bite one takes can recreate this mood; What we call "lefse" is not merely food.

I'm sharing my mother's lefse recipe today because, more than any other food, lefse represents a Norwegian Christmas to me. I want to leave a record of this recipe for my children in the technology available to me today.
If you know lefse, then you probably get it. Unlike other traditional Norwegian foods, [cough lutefisk cough] lefse doesn't seem to divide people. It is universally loved. Who doesn't like a tender flat potato bread, spread with butter and sprinkled with sugar? For me, only dark brown sugar will do but I'll bend enough to add a shaker of cinnamon sugar to my Christmas Eve smorgasbord for those weirdos who may prefer it. You savory lefse eaters . . . well, keep on being you.
The reason that I'm sharing my mom's lefse recipe and not just pointing you to Alanna's cousin LeAnne's excellent video tutorial (found here) is simple. My mom's way is different than what LeAnne does, and I want to be authentic to my mom's recipe.
It's a funny thing, the concept of authenticity. What makes a recipe authentic? Is it the way you or yours learned it or the way the most popular chef of the time chose to make it? In a FB food blogger group we recently had a lively discussion about authenticity and tradition as they relate to recipes. [Can a carbonara sauce be a carbonara sauce if you choose to use pig belly not pig cheek? I'm not going to touch that debate, but I'll happily eat a plate of whichever meat is used in the carbonara you prepare for me.]
My mother learned how to make lefse when she was a county extension agent in Minnesota in the 1950s. Her office was in the Pennington county courthouse, and she had a demo kitchen complete with multiple ovens and an overhead mirror. One of her functions was to prep the 4H kids who were doing demos at the fair. [The county fair was very early in the season, before the produce was ripe for showing/preserving, so they did all sorts of demos instead.]
Early one summer Doris Belanger won a blue ribbon making lefse at the county fair. That meant she'd be taking her lefse demo to the state fair at the end of the summer. In order to help polish her demo, my mom first had to learn from Doris how to make lefse. [I guess this isn't even my mom's lefse method, it's at least Doris's mom's mom's method.]
Doris taught my mom, and all summer long the 4H leader and mom met with Doris while she practiced. They gave tips on how to improve her presentation. At the state fair, Doris won a blue ribbon. She was comfortable and relaxed while making lefse, and her picture even appeared in the Twin Cities paper! In thanks, Doris's grandpa made my mom a grooved rolling pin on his lathe, and Doris's mom took a slat from an apple crate and carved a lefse turning stick which we call a spuda [spoo-duh--I don't know how to spell this].

My mom demonstrated this method during Scandinavian Week at the 1976 Bicentennial Smithsonian Festival of American Folklife on the National Mall in Washington, DC. If you know lefse, you get it, and tourists in the crowd who knew lefse would crowd around after each session, chatting and enjoying samples.
Mom has even appeared on Norwegian TV in a program about how Norwegian Americans celebrate Christmas. Now it's my turn to demo this method, this time using the internet. I'm still using my mom and her equipment, though.

This video shows my mom making the first piece of a batch of lefse. She rolls out the dough until we can see the pastry cloth markings through it which is how we ensure it's thin enough. Then she checks to make sure it's not bigger than the paper towel it will cool on. Finally she rolls it up on the spuda and carries it to the griddle.
Once she's sure the griddle is very hot, she unrolls the lefse onto it. [Mom knows her griddle heats evenly and doesn't need to spin the lefse for even cooking.] After the lefse is blistered on one side, she flips it over and cooks the other side. Then she picks up the lefse and walks back to the paper towel, realizing on the way that we need a new location for the finished stack so we're not walking all over the kitchen while doing the lefse dance. It's kind of a cardio exercise.
Potato Lefse (Recipe from Marjory Olsen Olson)
This recipe was developed in a university agricultural research facility in Crookston, Minnesota in the 1970s. Crookston is in the Red River Valley where potatoes are harvested and processed into instant potato flakes.
Note: This recipe requires chilling the dough before rolling it out. If I'm planning to cook the lefse in the morning, I'll mix up the dough the night before and leave it in the fridge to chill overnight. If I'm planning to cook in the afternoon, I'll mix up the dough while I'm having my morning cuppa and chill it until I'm ready to cook. You'll need several flat surfaces--to roll out the dough, to cook the lefse, and to hold the cooked lefse until you're all finished. Once you set everything up (and have flour all over the kitchen) you might as well keep on going until you've used up all the dough.
My Mother's Lefse

A recipe for the soft potato flatbread beloved by Norwegians and their descendants at home and abroad. This recipe uses potato flakes for an easy, smooth dough. Total time does not include chilling the dough, but does include cooking all the pieces of lefse.

Ingredients:
2 cups water 3 Tablespoons vegetable shortening 3 Tablespoons unsalted butter 2 teaspoons salt ½ cup milk 2 cups potato flakes (mom & I use Hungry Jack--bang the measuring cup on the counter to settle the flakes) ¼ teaspoon baking powder 1 Tablespoon sugar 1½ cups unbleached all purpose flour plus more for dusting the . . . well, everything
Instructions:
In a 3 quart pot bring water to boil (or use a large oven safe bowl and microwave on full power for 3 minutes), remove from heat and stir in shortening, butter, salt, milk, potato flakes, baking powder and sugar.
Cool to room temperature. (If I'm planning to cook in the morning, I'll start this the night before and let it chill in the fridge overnight. If I'm planning to cook in the afternoon I'll mix up the potatoes in the morning and let them chill until I'm ready to cook.)
Transfer 1 cup of this potato mixture into a medium bowl (keep the rest refrigerated until ready to use--which can be another day or two). With your hand, work in ½ cup of flour.
Divide into 5 equal portions. On a flour-dusted pastry board and with a flour dusted grooved rolling pin, roll each portion to dinner plate size and as thinly as possible. [On a Foley pastry frame, we roll until we can see the markings through the lefse.]
Bake on a very hot griddle (around 400 degrees Fahrenheit), flipping once, until flecked with brown. Total cooking time will be 60 to 90 seconds. It's quick.
Lay each piece on a paper towel and cover with another paper towel forming a stack.
Once all the balls of lefse dough have been cooked, cover the stack with a kitchen towel while they cool.
Fold and place on a serving tray once cool. Cover them with plastic wrap to keep from drying out.
Serve at room temperature, spread with butter and dark brown or cinnamon sugar.

This compound butter is tangy and slightly sweet, terrific on seasonal veggies, desserts, or breads. It's a terrific last minute homemade addition to a Thanksgiving or holiday meal.

I have a confession and an apology. Apology first. When I shared the Cranberry Chicken Swiss Chard Leek Enchiladas I was unaware that one of the ingredients I used, cranberry salsa, was not always available. I'm sorry.
Now for the confession--I often work ahead, posting recipes made up to a year in advance. See, I'm slow as the molasses in my cold kitchen in the wintertime. If I were to get recipes written, photographed and typed and published in order I'd be sharing tomato recipes in November, pumpkin recipes in January, and butternut squash recipes in April.
Nobody wants that--not even the folks Down Under?! Instead of missing the seasons by a mile, I opt to save posts until they are seasonally ripe. I've got some flexibility that way, so I can toss in a Beef and Venison Sloppy Joe recipe or a Slow Cooker Apple Chai for a crowd when the spirit moves me [and I'm asked].
Most of the time this method--of working ahead and taking my time, works fine. Sometimes I screw up. Royally. In this case I tried to find the same brand of cranberry salsa in the store and even contacted Ocean Spray only to learn that they don't make cranberry salsa each year. Instead of just saying 'oh well, you're on your own', I grabbed a bag of cranberries from my freezer stash and some hot peppers from my Community Supported Agriculture (CSA) farm share and made a batch.
If you've ever made cranberry sauce from the bag of berries, you can make cranberry salsa. It's just boiling and stirring, after all. If your cranberry sauce involves opening a can from both ends, let's talk and explore your options.
I canned this cranberry salsa. In fact I've canned so many things that my shelf support broke! Luckily the shelf fell onto the jars of salsa verde and Cantina Style Strawberry Salsa, so nothing slid to the floor. Although I did get 7 jars to fill up my canner, I did have a wee bit left over and it has been in my fridge for 2 weeks and tastes delicious. I'll bet it's good for at least 2-3 weeks in the fridge, and that's plenty long for Thanksgiving turkey sandwich leftovers. That means you don't have to process this before using.
Salad greens from the farm share and kohlrabi pickles make this sandwich amazing.

Today you can turn on a TV and see chefs making recipes in well-lit studios right in their own homes. It wasn't always this way. In the 1950's, in Minnesota, watching a food show on Minnesota Educational Television meant a county extension agent coming into the studio to demonstrate a seasonal recipe or new product. Hot lights, unscripted--just wild & wooly cooking on the fly where anything goes. The original Reality TV.
I grew up eating "Doc Billings Stuffing" on Christmas day at Mrs. Loomis' home, but it wasn't until I was older that I learned the story behind the name.
Eleanor Loomis was a Consumer Education Specialist in the Extension service of the University of Minnesota in the 1950's. She was on TV weekly, sharing buying tips, recipes, and cooking techniques. One week the theme of her show was Thanksgiving, and she brought in a special guest, Doc Billings. Doc Billings was a Turkey Specialist in the Extension service. For that episode she made her signature stuffing recipe--a moist rosemary-scented stuffing with apples and onions.
Doc Billings was aghast at how wet her stuffing appeared and threw a handful up the the ceiling. The cameraman followed the action all the way up, lingering on the glob of stuffing stuck to the studio ceiling. Mrs Loomis was mortified, her story became legend in my family, and I've always liked apples and onions in my stuffing. I also like cornbread stuffings, and oyster stuffings, and really I'm just a stuffing fan. Or call it dressing, if you prefer--I don't stuff my bird with it either way.
Mashed potatoes made decadent with cream cheese, roasted garlic, and sour cream. Make them ahead of time and reheat in the oven or the slow cooker. Great for holiday potlucks, kids having dental work, or just because this is such a great recipe. Thanks, MA!
The third occasion was after my spouse returned from a deployment, when I was stuffing him full of all his favorite dishes night after night. I even shared some of those leftovers with folks who found themselves unexpectedly in a hospital far away from home. Thanksgiving knows no boundaries.

I like to make festive muffins using the seasonal ingredients from my Community Supported Agriculture (CSA) farm share. One of the reasons I enjoy participating in Muffin Monday is the creative stretch to come up with something new each month. When I made these muffins last winter, I carefully hoarded the recipe in my Mobile Office until sweet potato season returned. Now that my farmers' sweet potato crop has been dug and is curing, I'm glad to share these muffins with the Muffin Monday crowd.

Earlier this year I read a book called The Year of Yes [Amazon link below with some other stuff. You click, you find something else to buy, and I may get a couple of pennies for my annual website costs. Up to you. Thanks.] In the book, Shonda Rhimes wrote about choosing to say Yes to projects outside her comfort zone, and I decided to do the same thing. When my local community center asked me to teach another canning class I said yes and developed a pickling class I'll be teaching next month. When Jennifer of the Ohio Pork Council asked me to do a cooking demo at the Ohio state fair? Of course I said yes.
The schedule looked busy. The dates of Fair Week included the time I'd be up in Minnesota having a family reunion celebrating my folks' 60th anniversary and visiting my spouse at his new assignment, meaning I'd come off driving 2200+ miles and jump right into cooking? It seemed reasonable 3 months ago, and in fact it was just fine. I was crazed and harried, but just fine. Jennifer asked me to cook something easy, and after about 30 seconds of thought I knew I'd be grabbing a lei and channeling my time in Hawaii. I could cook this with my eyes closed, although there are knives involved so I don't recommend you try it.
I lived in Hawaii, on Oahu, twice--both times courtesy of the military. During my first stay, my son was born in a Pepto bismol pink hospital on the side of a mountain while I was assigned to the patient squadron and waddled around exploring as much of the island as I cared in my heavily pregnant/postpartum state. [You might think that's not much, but you don't know my spouse. He had us hiking up to see waterfalls the day after our baby was released from the NICU--2 weeks after my C section.] My spouse was the one stationed in Hawaii the next time we lived on Oahu. He likes to refer to the assignment as my 3½ year "Hawaiian Honeymoon". [We had a JoP wedding in the States and I'd flown back to Germany 2 days later, so no honeymoon. The marriage was the important part, not the vacation.] When we arrived in Hawaii, our kids were 2½ years old (returning to his birthplace) and 8 months (our baby girl). They were 6 and 4 when we left. Yes, I changed a lot of diapers. I don't think you're supposed to wash diapers on a honeymoon, nor have your spouse go on a deployment, so I'm still waiting for my trip.

According to dictionary.com it means observation or examination of one's own emotional or mental state, mental processes, etc. To me, it's something that everyone should do periodically. Think about who you are, where you are in life, where you want to be, what your values are. Taking time to check in with yourself and think about your next steps means that you're not going to be blindly lurching from one thing/place/gig/person to another. What does this have to do with a dessert made with fresh cherries and blueberries? Simple. As much as I love seeing the fantastic patriotic desserts on Pinterest, I know that artificial colorings are not for me. This type of dessert, using seasonal fruits that are plentiful this time of year, is more my speed. Thinking about myself, what matters to me, how I want to feed my family makes me delighted to share this recipe with you.

It's good to have a skill in your kitchen repertoire that can be manifested in a variety of ways throughout the year. This recipe is an excellent example of that. The technique of braided 3 strands of bread dough is a simple one to master, and once you've got it down you can turn out an infinite array of breads for nearly any occasion. [As I type this, my brain is thinking towards savory routes.] I learned how to braid bread while living in Finland where I made a cardamom-spiced version called Pulla [poo-lah] (you can find my Finnish Pulla recipe here).
Sometimes I get creative before I start braiding the dough. I've flattened and spread ropes of dough with caramel pumpkin butter before braiding to make a Caramel Pumpkin Butter Stuffed Braided Bread.
I've gotten creative using Community Supported Agriculture (CSA) farm share vegetables to naturally color the dough for a tricolor Mardi Gras Bread using purple sweet potatoes, orange sweet potatoes, plus matcha green tea powder to make the traditional colors in sweet bread form.
The basis of this bread is a sweetened, enriched dough. My sweet potato bread dough recipe was inspired by the Overnight Sweet Potato Monkey Bread in Donna Currie's book Make Ahead Bread. When you make dough using vegetables the moisture content varies widely depending on the age of the vegetable and the amount of rainfall during the growing season, so it's important to be familiar with how an enriched dough should act/feel/look like. If you've never baked bread I would not recommend diving into this recipe. I'd suggest you start with the Pulla to get the hang of it, then branch out to incorporating roasted sweet potatoes into your dough.
For this recipe I wanted to expand on the sweet potato dough concept with complementary flavors. I chose pecans and brown sugar because that's my favorite way to eat sweet potatoes. I've made this bread several times, with several variations. I've got a bunch of notes, so do be sure to read through before embarking on your baking session(s). You can be as elaborate as you want, using 3 types of dough to make 6 loaves of multicolored purple/orange/brown bread. You could simply make a single batch of orange sweet potato dough and make two loaves of bread. Add in pecans or leave them out as you prefer. Sprinkle on maple sugar or use turbinado sugar as you prefer. This recipe is pretty forgiving, and the dough can be stored in the fridge for several days or frozen for several months.

The key ingredient in this recipe can be foraged, for free, across North America and beyond. I'm not one to turn away free food, especially free food that pops up when I'm most in need of a fresh local food fix after months of eating from the freezer, the canning shelves, and the Strategic Winter Squash Reserve. Granted, I cannot live on a diet of wild violets, but that doesn't stop me from using them in a variety of ways. Today's recipe is my third using wild violets. I've shared Wild Violet Granola, which I made using wild violet syrup. I've made Wild Violet Muffins--dunking the tops in wild violet sugar to finish them off sweetly. This time I'm also using the fresh flowers--not just in a syrup, jelly, or sugar preparation--to make a compound butter.
Use this wild violet butter as a spread for biscuits, scones, muffins or toast. Add it to an Easter spread or Mother's Day brunch. If you're fortunate to have ample blossoms [I almost typed ample bosoms] it would be neat to decorate the table with some as well. Start with a good quality salted butter. Typically I buy unsalted butter in bulk, so making compound butters are when I splurge for the single packages of salted butter, and usually a European style butter because it's creamier.
Making compound butters is an easy way to add a bit of flair to a holiday meal. They keep for several days in the fridge (longer in the freezer, although I've not frozen this type of butter) so you can prepare early for your celebration. In the summertime I'll use an abundance of herbs to make Dill Butter. For Thanksgiving and Christmas I like to serve Cranberry Honey Butter. It's a small addition, but it's a nice touch that makes a special meal that much more special.

The BLUF (military acronym for Bottom Line Up Front) is this is a quick sweet fruit & nut bread that happens to use a pound of pork sausage. Meat and fruit in bread? It sounds crazy--but recall that mincemeat originally contained meat. Honest--you gotta try it! This recipe comes from Ruth Runyan of Oakview Farms. In this post I share how 3,500 Ohio farms raise enough pork to feed 25 million people. That's more than double Ohio's population, but these good folks share with plenty of other states. I was intrigued by the idea of using savory sausage in a sweet bread. After all, I like maple syrup on my breakfast sausage, bacon in my Maple Peanut Butter Bacon waffles, and I have been known to do "quality control" testing on the honey bacon at work. Sweet and savory just goes together. In addition to a hearty breakfast option, this bread can be served as a side dish (like I first tried it, with Perfect Grilled Pork Chops). I suspect it would make a terrific stuffing or dressing alongside a holiday meal. I bet you could even stuff thick cut pork chops with this bread! No matter what your application, it's an unusual recipe to add to your repertoire. Shredded carrots and celeriac combined into patties and fried to perfection. These could be a side dish, breakfast, or a fun addition to a latke party.
One of the great things about root vegetables is that they keep such a relatively long time. Just like the Strategic Winter Squash Reserve in the basement (new and improved with white and sweet potato subdivisions!), root vegetables are an excellent resource for folks trying to eat locally grown foods in the winter months. I'm glad to support farmers who offer extended deliveries after the regular Community Supported Agriculture (CSA) farm share season ends, knowing that for the most part I'll get long-storing vegetables that will see me into the new year.
I've got root vegetables filling up my crisper right now. After the local apples vanished (sad face there, there's nothing like a local apple in terms of flavor) I'd usually transition to crispers full of citrus fruit from the Band Fruit Fundraiser. But seasons change, and your kid who has been in band throughout high school moves on to college where you get to write big checks and not get a case of tangelos in return. So no citrus--right now I've got glorious carrots from the farm share packed into my crisper.
I'm always looking to add vegetables into baked goods. I think they add moisture, flavor, and nutrition to my family's table. Muffins are an easy delivery method because they assemble and bake so quickly. My kids are happy to eat muffins for breakfast and for an after school snack. For this month's Muffin Monday, I bring you a recipe that is both festive--with the bits of red dried cranberries and green pistachios. This recipe is elevated above my usual muffin because of the sweet cream cheese filling tucked inside, but it's still on the healthier side because I don't really want to send my kids off to school with a bunch of chocolate frosted sugar bombs in their bellies.
I got the idea for this muffin thanks to my daughter. We were walking the dog herd down to the local grocery store to buy a gallon of milk. [This is a bonus fitness and economic tip--over a year ago I started walking a mile to the store if the only item on the list was milk. It saves on impulse purchases and the dogs and I get a bit of exercise.] I left her with the dogs and went inside to shop, calling over my shoulder 'do we need anything else?' as an afterthought. She requested a Killer Brownie. It got me thinking that I could use a treat, too. Since I was in the bakery buying the brownie anyway, I turned to the muffin case. This was the site of the Good Morning Muffin that inspired my Healthy {No Sugar} Carrot Cake Muffins. I was delighted to see a new version of the Good Morning Muffin with sweetened cream cheese in the center and decided that would be my splurge. After we got back home we enjoyed a snack of milk & baked goods and I put my thinking toque on. [That's a Bob & Doug McKenzie and Great White North reference, not some kind of chef thing.]
I made two batches of these muffins, trying different ways to include the sweetened cream cheese filling. The first way, shown below, was to scoop the usual amount of muffin batter into the prepared cup, then use a small spoon to create some space and spoon in the sweetened cream cheese. This technique did not turn out well. The cream cheese oozed out onto my pan and the muffins were hard to serve in a mounded heap because the cream cheese on the top of them was sticking to anything that landed atop it. The second effort worked better--I used a smaller scoop to put in about half the amount of batter, then spooned in the cream cheese and topped with the other half of the batter.

That money will keep on circulating around, supporting the people and places near me. That's why I buy local. Well, that and I think fresh food tastes better so I may as well enjoy it.
I want to challenge my readers to expand their support past a single day of the year, and commit to making one Saturday a month Small Business Saturday. I've got an idea for you--instead of just buying holiday gifts from small businesses once a year, what about staples? Can you think of an item you could source locally? How about food [this site is about food, after all]. Perhaps a condiment, spice rub, loaf of bread, honey, eggs or meat? Choose to buy that item exclusively from your local source for the next 4 months. What about gifts for other people--in the form of gift certificates to local businesses? Talk about a win-win situation!
I've been supporting my local farmers by participating in a Community Supported Agriculture (CSA) farm share for over a decade. I started this website to help other folks like me make the most of the fresh produce both while it's seasonally abundant and by putting it by so I could keep on eating locally even in the winter months. Over the past couple years I'm learning how convenient it is to source my meats locally as well. Once my spouse decided to stop eating meat unless he knew where it came from, it became imperative for me to up my local meat game. When the Ohio Pork Council invited me to tour a local hog farm I immediately emailed my spouse and asked, "are you free next Monday to go visit a farm with me?" Now, before I get to the farm visit, I'd like to share a little bit about Ohio Pork. If you're buying pork at the farmer's market or at a farm store you can be reasonably sure it was locally produced. Did you know that by buying pork sold at grocery stores, like the Kroger down the road, you continue to support Ohio farm families? There are 3,500 farms in Ohio raising pork--for our region and for a lot of the East coast as well, as Ohio is one of the closest pork-producing states to one third of all Americans. Now I'll tell you a bit about the Ohio hog farmer I met, Mark Runyan of Oakview Farms, before getting to the title of this post--the Runyan family's secret to the perfect grilled pork chop.
Oakview Farms is a 4th generation hog farm located in Urbana, Ohio. During our visit we met with Mark's parents, Bud and Ruth, as well as his son Myer. Bud and Ruth live next door to the store, Oakview Farm Meats, and we divided our visit between the 2 places. I learned so much and I am afraid I'll skip over some parts [I may know a tad more than a civilian about pork production thanks to my degree in Animal Science] and I don't know what you don't know, you know? For example, when you buy meat at Oakview Farm Meats, or at the farmer's market, that meat is frozen. Why? Just like Clarence Birdseye knew that freezing vegetables right after they are picked ensures the best quality product, freezing meat after it's harvested results in the best quality product. Yes, it makes me need to plan ahead to use move meat to the lower shelf of the fridge to thaw the day before, but it's worth it. You can't beat that kind of freshness.
I was expecting to see some pigs on this tour, but I didn't and I'll tell you why: biosecurity. The Runyans care more about the health of their livestock than they do about my desire to take a picture with a pig, and that is how it should be. We all carry germs with us, and if my germs were to get a pig sick, they'd need antibiotics. To avoid needing to give hogs antibiotics it's just easier to make the barn a secure facility. In addition to routine antibiotics, do you know what else these pigs don't get? Hormones! Hormones are not permitted for use in growing pigs. Period. This is a federal regulation. Pork producers don't use hormones. End of story. What about GMOs? There are no genetically modified food animals on the market. What about hogs being indoors vs out of doors? The answer to this question makes sense to me--as pigs have skin similar to ours, pork producers do their best to keep their livestock comfortable. That means keeping hogs cool in the summer and warm in the winter. That way, the pig's energy is used towards growing, not to regulate its temperature based on changing conditions. After all, the most efficient way to get the pig to a market weight is the most cost effective for a pork producer, and we're all looking for value.
Each time I talk with farmers I come away impressed with the breadth and depth of knowledge in their chosen fields and amazed at how small our planet is. Earlier this year I visited with John Ludy, a cheesemaker in Wisconsin (and my Dad's high school classmate) who has travelled to Eastern Europe and South America sharing new ideas in cheesemaking. Mark's been to Sweden, Mexico and China in efforts to produce a quality pork product from the ground up, so to speak. You see, when folks began breeding hogs to be more lean and muscular, that carried with it a piece of DNA known as a stress gene--the animals didn't fare well when handled. When Mark Runyan shared how his family emptied their farm and started from scratch with Swedish hogs 20 years ago it just reinforced the fact that farmers are constantly trying to improve using the best research available. By starting over with the Swedish hogs, which do not have the stress gene, Mark is helping pork producers improve throughout the world. His son Myer is a recent graduate of OSU so I'm interested to see what the future brings. From the DNA of the animals to their living conditions, care is taken by the Runyan family to produce the best pork that they can at Oakview Farms.
Mark's newest venture is with Pam Bowshier, of Cosmic Charlie Breads and Threads. I first saw Mark & Pam two years ago at the Montgomery County Food Summit, where they spoke about their virtual farmer's market (I wrote about it here). Together they've formed Hippie and the Farmer. This started when Pam was selling her vegan breads and Mark was offering samples of grilled Oakview Farm meats. They put their products together [like peanut butter and chocolate in a Reese's cup] and the result is a savory success. In the summer months they offer a Harvest Moon subscription box with produce, meats and breads. In the winter they offer a Cucina Rustica box--farm fresh frozen dinners. That's a great way to make eating locally-sourced food accessible to a wide variety of folks.

In the coming weeks, I'll be sharing another one of the Runyan family's favorite ways to enjoy pork, Ruth's Sweet Sausage Bread, but for now I wanted to share what we ate for lunch. Bud grilled up these absolutely perfect pork chops, and Ruth supplied delicious side dishes (as well as breakfast at the beginning of the visit--bacon inside the cinnamon rolls? You bet!). When I asked for a favorite recipe to share, all three generations suggested these pork chops. We certainly enjoyed them, and I hope you do as well!
Perfectly Grilled Pork Chops

The secret recipe to a perfectly grilled pork chop from an Ohio hog farming family.
Prep time:
Cook time:
Total time:
Yield: 1 chop per person
Ingredients: 1 ribeye pork chop, about ¾ to 1 inch thick Lawry's seasoned salt
Instructions:
Preheat grill to direct medium heat, about 275 degrees Fahrenheit.
Sprinkle Lawry's seasoned salt on both sides of the chop.
Grill for about 5 to 8 minutes, then flip to the other side.
Continue grilling until the internal temperature is 145 degrees Fahrenheit, another 5 to 8 minutes.
Serve, and if you're lucky enough to have some of Ruth's hash brown potato casserole and sweet sausage bread (recipe here) you're lucky, indeed.
