Sautéed Greens with Cranberry and Pistachio

Brightly colored and fresh tasting, this side dish of sautéed cooking greens with dried cranberries and crunchy pistachios is sure to satisfy. Great alongside roasted meats or mashed potatoes!

Talking with my friends who've eaten from Community Supported Agriculture (CSA) farm shares, a few frequent comments stand out:

  • "The flavor of fresh foods is amazing"
  • "I never knew I liked _________ (insert a new-to-them vegetable here like kohlrabi or beets)"
  • "I'm not used to eating all these greens."

It's this last comment I want to address today.

I'm finding that my family is more likely to eat greens if I keep throwing greens at them. Not literally, though. If I literally throw greens at people, Robert Barker happily eats whatever lands on the floor. Simon flees from the leaves in terror, and Vincent grabs one, refuses to eat it, but will defend--to the pain--his right to keep it in his bed. Anyway, I serve a lot of greens during the cool weather crop season. Salads (chopped, rinsed, spun and packed into wide mouth jars for easy access) appear alongside most entrees when we've got salad mix of lettuces in the farm share box. Stir fries (like my Colorful Chard and Chicken Stir Fry or my Orange Teriyaki Slaw Stir Fry) or smoothies (like my Peanut Butter, Spinach and Banana Smoothie or my Kale, Date, Banana, and Peanut Butter Smoothie) appear if there are members of the beet and cabbage families in the share.

I'm going to preach today. If you're in the choir, skip on down or shout Amen! as the spirit moves you. I want to talk to the folks, LIKE ME, who get overwhelmed by the produce in the Community Supported Agriculture (CSA) farm share box. The folks who don't want to keep on with a farm share because they we don't know what to do with ________ [insert name of farm share ingredient here] before it goes bad. It's why I started this blog, after all.

The thing is, we all eat. Heck, my spouse and kids want to consume food 4 to 6 times a day, every single day. It doesn't make sense to waste the food already in your fridge. After all, you've paid for it, you know? Not to mention that your farmers have grown it. So practical tips like this one help you us to make the most of the farm share.

A while back I shared a recipe for Mustard Greens Pesto. You can find the recipe here. This recipe makes quick work of a large volume of mustard greens and can hang out in the fridge or freezer until you are ready to use it. Since my farm share is about 25 weeks of the year, there is plenty of time for me to enjoy put up farm share produce on the off months.

This low carb recipe is flexible. I could have stopped with just the pesto and made it vegetarian, but to tempt my family I browned half a pound of Italian sausage and served that over top. Plenty of cheese seals the deal for everyone who loves cheese.

Mustard Greens Pesto with Pecans and Asiago

Peppery mustard greens and toasted pecans form the base for this vegetarian sauce which freezes nicely for later enjoyment.

I thought the focus of my blog was how I feed my family from the Community Supported Agriculture (CSA) farm share, but my friend Laura astutely corrected me. I focus more on putting up the farm share, especially some weeks more than others it seems lately.

I've been canning and grilling and roasting and freezing like crazy lately. The table full of tomatoes became shelves in the basement full of filled canning jars. [Yet each week I hit the store for more lids, or caps, or jars. I thought they were vanishing into a black hole, but I realized it was just my son's backpack. Yay for back to school.]

Back to blog focus--this recipe is a wonderful example of how to put up greens when you are overwhelmed with a variety of options. I often simply cannot deal with such a variety of greens like we get in the farm share come cool weather, so anything I can put up for later saves my sanity. My inspiration comes from the Kale and Walnut Pesto recipe out of Farmer John's Cookbook: The Real Dirt on Vegetables (Amazon affiliate link). I swapped out the type of greens, the type of nuts, and even the type of cheese but kept the concept. This freezes well and is refreshing tossed with spaghetti sauce as we'll see next month.

Mustard Greens Kheema (Ground Beef and Mustard Greens Curry)

Ground beef and a whole bunch of mustard greens magically transformed into an Indian-spiced main dish the whole family enjoyed.


I've been calling myself a seasonal eater for many years now, since I embraced the concept of eating locally from the Community Supported Agriculture (CSA) farm share. I've recently realized that's not entirely true. A more accurate label would be I am a weather-dependent eater.

While I do eat locally [as in, you won't find fresh tomatoes or fresh berries in my house unless they came from the garden, the farm share or the farmer's market because I like food that tastes good] I don't care what season we're supposed to be in. What matters more is what it feels like when I step outside with the dogs each day. Menu plans get tossed out the window if the weather is not as expected.

Let's take the other day, the first of June, as a prime example. According to the guy on public radio it's the 37th Week of Middle Spring or something and I planned to use up the rest of my son's birthday dinner--steak, potatoes and Bernaise sauce--in an omelette with a side salad from the farm share. Sounds like a lovely Spring meal, no? Except June dawned cold and rainy, not omelette and salad weather. We turned the steak into beef stroganoff instead. I am a weather-dependent eater.

This recipe works for a wide climate range which makes sense because we eat Indian food year round. Last Fall I asked my friend Laura, author of The Spiced Life, for a recipe to use both ground beef [from the cow in the freezer] and mustard greens from the farm share. She sent me to her Kheema with Springtime Greens. My spice cabinet is not as extensive as Laura's and I wanted to just throw everything in the skillet, so I had to modify.

Last week I posted an easy vegetarian recipe for using your farm share greens--Artichoke & Arugula Pesto Burrata Pasta. A year or so ago I posted an even easier vegetarian recipe--Squash, Mustard Greens and Chick Pea Masala.  I'm ready to share a more involved recipe. While it does have the extensive spice list of Indian food at home, it's also a one pot meal (ok, rice cooker = second pot). My kids liked both the near uniform texture of the meat + greens as well as the familiar flavors of their favorite Indian foods. I liked getting rid of an entire bag of mustard greens in one swoop.

Six Ingredient Spicy Mustard Greens Soup (in the Slow Cooker)

When the community supported agriculture (CSA) farm share give you a gallon-sized bag of mustard greens, you've got to get right on them. If you don't, you'll turn around one day to find 3 gallons of mustard greens jockeying for space with the cabbages, lettuces, spinach, and . . . . the next thing you know, you have Greens Paralysis. It's a common phenomenon.

When I was suffering from Greens Paralysis, as I posted on my FB page, it was primarily due to an excess of mustard greens and too few family dinners. At a recent Local Food Summit in my town I had the pleasure of listening to my farmer, George Mertz, talk about the benefits of joining a CSA. One that I wasn't expecting to hear, but absolutely agree with, is that joining a CSA will increase the number of times you'll sit down to a home-cooked meal. This easy home-cooked meal broke my Greens Paralysis. With just six ingredients it assembles quickly in the slow cooker.

Now, when I say 'only six ingredients' I'm not talking about ingredients like a cake mix and a can of pie filling. It's true, two of my six ingredients are chock full of other ingredients. Those would be the chorizo and V8 juice. [Actually, so is my chicken stock, now that I think on it. But I can pronounce all of these ingredients.] The sum of the parts of this soup, thanks to those multi-faceted ingredients, is superb. Like nearly all soups, it is better as a leftover on the second day. And anything that breaks my Greens Paralysis, that enables me to get my groove back with respect to my farm share, is very appreciated.

Squash, Mustard Greens, and Chick Pea Masala Stew (Fast From The Farm Share)

I've categorized fast recipes on this site as Quick Takes, and before I discovered some wonderful Wednesday link ups I used to post fast recipes on Thursdays, because Thursday is one of the days that I'm running kids around right up until suppertime.
However, I've been kicking around the phrase "Fast from the Farm Share" in my head for a while, so I'm going to share an occasional series of recipes that can get on the table quickly using ingredients from the CSA farm share (or your garden, or the farmer's market, or grocery store).

You'll notice I'm relying on a prepared sauce for this stew.  Sure, I can make my own masala (with chicken and chick peas here, or with patty pan squash and ground beef here, or with sweet potato, chicken, and chick pea here) but those are slow cooker recipes which don't fit with the fast theme.

This recipe is for those nights when you've got fresh vegetables that you need to eat and no time/desire to think about what to do with them or make some elaborate concoction.  It comes together quickly (cooking the rice takes longest, so if you've got the option, I'd set up the rice cooker before work, or have a kid start the rice cooker after school, or buy precooked rice) and tastes wonderful. And my kids snarfed up the mustard greens very quickly this way (magical naan, that is) so that's a win in my book.
