Pineapple & Sweet Potato Muffins #MuffinMonday

These sweet muffins are packed with fruit--pineapple--and vegetable--sweet potato which add depth and character to a tender breakfast treat. Topped with maple sugar for crunch, this muffin is an all around satisfying snack.

Welcome to Muffin Monday! I've been having so much fun baking muffins for the Detachment that I'm bringing a new one for you this month--a sweet potato muffin with pineapple in the batter.

The inspiration for this muffin came from the growers of these Stokes purple sweet potatoes--Frieda's. My first exposure to purple sweet potatoes came via the Mile Creek Farm Community Supported Agriculture (CSA) farm share. I had so much fun combining orange and purple sweet potatoes in my Overnight Sweet Potato Monkey Bread and playing with the vivid colors to make my Mardi Gras Braided Bread that I searched all over my new city until I located some purple sweet potatoes at my local natural foods coop.

Semi Homemade Cranberry Pineapple Pecan Salad

A quick and easy 3 ingredient side dish that tastes fresh, sweet, cool and crunchy all at once. Jazz up a can of whole berry cranberry sauce and perk up your holiday table.

Recipe for a quick and easy 3 ingredient side dish that tastes fresh, sweet, cool and crunchy all at once. Jazz up a can of whole berry cranberry sauce with fresh pineapple and toasted pecans, and perk up your holiday table.


Two things contributed to this cranberry sauce. Neither of them involve beets. Rejoice!
First, I swung by my closest Kroger grocery store during their pre-holiday free sample palooza and tried a taste of cranberry celebration salad. Second, my mom read this post on my make ahead slow cooker cranberry orange and beet salad and suggested I offer up a recipe for doctored up cranberry sauce that starts with a can, not a bag.

To be honest, I'm cool with the can of whole berry cranberry sauce [though the jellied kind icks me out as I did not grow up with it]. I'm game to start out with a bag of cranberries too--though if we're a small amount around the table I don't need that much sauce. I just require demand a small amount of sweet red salad to mix with my mashed potatoes, stuffing, turkey and gravy. [In the same way, I need that dab of lingonberry jam with my meatballs and potatoes at IKEA.]

If you're not into beets yoga using a slow cooker or stove top to make your cranberry sauce but you've got a knife and the ability to toast pecans for a couple of minutes, this is a fast way to dress up a perfectly fine side dish into something even better.

Do you buy the Halloween candy that you like, or do you buy the Halloween candy that will not tempt you? [Does anyone actually like Bit-o-Honey?]





When I moved to Ohio I realized that, unlike the 4th of July, Thanksgiving Day, Christmas or New Year's, the day that Halloween is celebrated is not set in stone. Around here, some towns have their kids trick or treat on the weekend before October 31st for reasons that have escaped me. [Let's celebrate Thanksgiving on a Sunday, hmm? That actually makes sense, so you're not working all day long and then pulling the best American meal of the year out of your ear 24 hrs later.]





Our town always celebrates on the 31st, which means that many years our flat, well-lit, sidewalked town with houses close together is overrun with 'people from off' coming to double dip on their trick or treating. I am quite curious this year, as Halloween falls on a Saturday, to see what reasons folks will invent to come trick or treat in our town. It's possible folks will keep to their own towns, and in that case I'll need to change up my game. See, I usually buy candy I DON'T want to have leftovers of, so I am not tempted into additional snackage.

As a side note, I've got kids with peanut and dairy allergies on my block, so I always have 2 bowls of candy: one that only contains nut- and dairy-free packages (i.e., pure packets of sugary goodness) and one that may have nuts and/or dairy. I've got signs on each bowl, and often kids thank me. Consider doing that yourself.

I'm sharing a pizza today that, for a change from my usual pizza recipes, is a topping combo found in standard pizza joints. No Beet Greens & Scrambled Egg Pizza here. No Shaved Kohlrabi Pizzas. Nope, I'm keeping it simple today with ham & pineapple on red sauce. Except, as you'll see, it's the little things that matter. Little touches that make your homemade pizza just a bit better than delivery.

For this pizza my little changes are using fresh pineapple, using shaved ham, spreading a thin layer of mascarpone cheese on the crust, and using a honey wheat pizza dough.

Let's start with the crust. If you don't want to make your own dough--don't bother. It's a pizza, and if making dough stresses you out then skip it. It's pretty easy to get good pizza crusts in bakeries and grocery stores these days. I threw my ingredients in the bread machine and let it do the work. [I threw a different set of 'ingredients' in my washing machine and let it work as well. I love technology.]

Get some mascarpone cheese. This is what, the third pizza using mascarpone that I've shared this year? THAT'S BECAUSE IT'S NOT JUST FOR TIRAMISU. I've never even made tiramisu, but I frequently have a tub of mascarpone in my cheese drawer.

Use shaved ham. A very thin slice of ham gets crispier in the oven or on the grill, when compared to a standard slice of ham. That little touch adds texture and flavor to your pizza.

Splurge on fresh pineapple when it's on sale. When living in Hawaii I learned to tell a ripe whole pineapple (look for 'eyes' all the same size), but unless I'm grilling spears I buy the pre-cored fresh tubs at the store. Do I ever buy canned pineapple? You bet--great in a dump cake and a smoothie. Fresh is better on a pizza because it is drier and the heat brings out the sweetness easier.

With just a few little changes you can make a terrific pizza at home, better than you could get at a pizza joint. Aren't you worth it?

Kalua Pig, Pineapple, and Cabbage Salad

I got out of the car and immediately my ears were soothed by the rushing of water. I began to notice calls--most notably the red-winged blackbird that's been ubiquitous throughout the trip, but also plenty of little brown birds whose names I don't know despite iBirdPlus.

As I stood on the banks of Plum Creek I could envision what Laura Ingalls' childhood home was like. It was a very special moment for me.

A few minutes later a van pulled up with Idaho plates and I met the first group of fellow Little House tourists of our trip.

It is a small world.

Make and Take Smoothies for Moms

Consider giving the gift of smoothies to a new mom, a friend recovering from oral surgery, or a harried neighbor. Ready to shake up and drink, smoothies are a fast way to get some nutrition and get back to business--be that bonding, healing, or caregiving.

Motherhood equals nurturing (no, you don't have to have created/raised offspring to read on--we've all had moms). One way folks nurture is via food [hello, nurture and nutrition share the same root].
Taking meals to a new mom is one way of nurturing the new family as they become a unit. Taking a meal to a mom after her 6th kid is just plain nurturing for her [though watching the kids and doing her laundry so she can get a massage is even better but doesn't fit with my theme for today's recipe].

What about other folks who need nurturing? A busy friend caring for aging parents? A neighbor caring for his ailing wife? Someone recovering from oral surgery? It's the last situation that inspired today's post, but the more I though about it the more I think this concept would work for a variety of circumstances.

Smoothies keep for several days, and it's easy to scale up a recipe to make an extra portion. With that in mind, when I found out my friend wouldn't be eating solid food for quite some time after her tonsillectomy, I offered to bring her some smoothies. I was going to be near her home on post-op day #5 and that seemed like a good time to deliver as she'd be coming out of the initial post-op haze.

Kalua Pig Summer Rolls with Kohlrabi, Carrots and Pineapple

Kalua pig combined with shredded kohlrabi and carrots in a rice paper wrapped roll, sweetened with a bit of pineapple for an Island style meal. Yes, this is another way to eat that Community Supported Agriculture (CSA) farm share kohlrabi!

Kohlrabi disclaimers aside, this is also a wonderful way to enjoy some Hawaiian flavors while keeping your house reasonably cool.  Sure sure, you've got an imu [underground pit oven] in the backyard for your monthly luau . . . or perhaps like me you don't.


Kalua pig cooks easily in the slow cooker [please not I said easily, not quickly--if you don't have Kalua pig already cooked you'll need to start this a day early]--but since making Kalua pig means you'll make a whole bunch of meat, it's delightful that the leftovers freeze well [add some pan juices to the container].

While we lived in Hawaii we enjoyed Kalua pig with sautéed cabbage, '2 scoop rice', and pineapple chunks.  I decided to create a summer roll that combined many of the same elements, but in a cool and tidy* package.  I used shredded raw kohlrabi instead of sautéed cabbage, rice paper wrappers in lieu of rice, added in some shredded carrot for color, and tucked the pineapple inside.


This is a terrific hot weather meal--packed with vegetables and quite satisfying--keeping my kitchen cool.  It travels well in a chilled bag, too, for summer picnics.

I want to talk about barriers to successful grilling.
[Those of you with your grills hooked up to your natural gas line, skip ahead to the recipe. Lucky ducks. The rest of you, read on.]
See, for 9 of the past 10 years we have tried--key word--to be successful at grilling.  Our grill is the largest tiny portable one there is, and it has a nice loop to hold a tiny propane tank (the kind a restaurant might use for creme brûlée). Each time we wanted to grill out, we'd carry the grill out of the shed, set it up, preheat, put the food on the hot grill, and then . . . when it was time to turn the meat, the small propane tank was empty and the grill was cooling. When this scenario is played out often, it makes you want to just crank up the oven and heat up the house!


Last summer I decided to tackle our grilling barrier head on.  We got a standard size propane tank, one that has to be carried separately from our little grill. Finally I could trust that when I started the fire I'd be able to see the cooking through, and with that our grilling changed.  We do store our grill in the garage (because we've since moved to a house with a garage) so once it's hauled out and set up I like to grill anything handy and used the grilled items in future meals.  I've used this technique in my Grilled Veggie Ciabatta Pizza, but now I'd like to share a terrific picnic side dish or light summer supper:  Pasta Salad with Grilled Fruit and Goat Cheese.

At its heart this a recipe for macaroni and cheese, so it's no surprise that I got the recipe from MELT: The Art of Macaroni and Cheese (link to the author's website).  I received a copy of this terrific cookbook last fall and have made several recipes with it, including Macaroni and Cheese in a Pumpkin and Pumpkin Cranberry Maple Kugel.


One of the first recipes that caught my eye was an orzo salad with Humboldt Fog goat cheese and grilled peaches. Since I eat seasonally I figured I'd need to wait until peach season to try it--but first I found myself with some fresh figs at the same time  I found Humboldt Fog marked down at the fancy cheese counter.  Score! This tasted so yummy that the name--Humboldt Fog--stuck, so since then I'm always on the lookout for it in the marked down bin.

The next time I came across the cheese coincided with cored pineapple selling for the same price as whole pineapple.  I prefer not to pay for the parts that just go into the compost anyway, so I picked up a container of prepped pineapple. While we had the grill going for steaks, I whipped up the marinade and tossed the pineapple in to coat.  I was out of orzo, so I subbed in elbow macaroni.

This savory-sweet pasta salad is a refreshing addition to summer meals. We prefer it served freshly tossed or at room temperature (do not microwave to reheat the leftovers).

Fall and Winter Fruit Recipe Round Up

When kids knock on your door selling something for a fundraiser, do you place an order?  Decline politely and send them on their way?  Offer instead to give a donation?

Some items (Girl Scout cookies, fresh fruit) I always buy.  Other things (chocolate bars, popcorn, mulch) merit a donation.  Some things (cheesecake) depend on my mood at the time.  When I order fresh fruit, though, sometimes I need a little inspiration to use it all up.

Since my son's band is selling fruit right now, I asked my fellow food bloggers for recipes using fresh Fall and Winter fruits.
