This Greek wild rice salad starts with pressure-cooked tender wild rice marinated in Greek salad dressing tossed with spinach, feta, and a rotating cast of preserved and fresh vegetables.

While developing this recipe I made this salad three or four times in slightly different ways, and each time my spouse said, "wow, this is a great salad". Before I decided to put it on the website I figured I should ask a wider audience, so I made it for one of my Instant Pot cooking classes.

It was a hit--from the students to the building monitor and custodian who helped me 'deal' with the leftovers!  Next I served it to my extended family members, twice, and I think it's about as good as it's going to get.

As the weather turns warmer I crave lighter foods. When evenings are still cool, however, having a nice warm side dish makes for a cozy meal. This Spring Risotto from Kristy Bernardo's cookbook Weeknight Cooking with your Instant Pot is perfect for this time of year.

My spouse bought me an Instant Pot last summer, and I think it's a terrific tool to help me get a home-cooked meal on the table. I almost said "nutritious home-cooked meal" but if you've been here before (thanks for coming back!) you'll know my usual fare is nutritious home-cooked meals. I feel the IP is more than a gadget--the ease of making clear, beautiful chicken stock ahem chicken bone broth, dry beans to a meal in an hour, and easy to peel hard boiled eggs are big selling points--but it will not replace my rice cooker or my slow cooker. I don't think I'll ever throw dry spaghetti, sauce, and water into the IP. It's too easy to do on the stove top. Frozen meat? Maybe. We'll see.

Sometimes all I can think about are the sides to a meal, and sometimes the sides are an afterthought. In the summertime, when the Community Supported Agriculture (CSA) farm share box brings copious amounts of fresh produce into my house on a weekly basis, the sides are the Main Event. Sure, I throw in a protein here and there--but my goal is to incorporate as many farm share vegetables into our meals (and get them out of my crisper) as possible.

I'm not trying to use All The Vegetables for health reasons, it's really more of a decluttering issue, but the end result is that we eat more plant-based foods and that's always a Good Thing. Remember the movie Bull Durham? If you build it, they will come. I'm finding with my kids that if I serve it, they (eventually) will eat it. The more I prepare vegetable side dishes, the more vegetables end up on my kids' plates, and the more my family eats vegetables. The key is to actually prepare the side dishes, not just think that I ought to make a side dish.

Since my day job is a prep cook, I'm pretty efficient at chopping up a mess of vegetables. I find myself starting the prep work without knowing where the dish is going. Often with the abundant summer zucchini, my prep steps involve shredding and freezing bags of squash for Zucchini Pancakes or Zucchini and Refried Bean Enchiladas. Other times I'll grill a mess of squash--for Grilled Zucchini with Feta, or to use on a Grilled Vegetable Ciabatta Pizza. It's rare that I roast zucchini, primarily because I live in an old house and if I'm using my oven, my bedroom gets pretty darn uncomfortable for sleeping. But that shouldn't deter me from providing more options to my readers, so today I'm sharing a roasted vegetable side dish recipe.

The key ingredient in this recipe can be foraged, for free, across North America and beyond. I'm not one to turn away free food, especially free food that pops up when I'm most in need of a fresh local food fix after months of eating from the freezer, the canning shelves, and the Strategic Winter Squash Reserve. Granted, I cannot live on a diet of wild violets, but that doesn't stop me from using them in a variety of ways. Today's recipe is my third using wild violets. I've shared Wild Violet Granola, which I made using wild violet syrup. I've made Wild Violet Muffins--dunking the tops in wild violet sugar to finish them off sweetly. This time I'm also using the fresh flowers--not just in a syrup, jelly, or sugar preparation--to make a compound butter.

Use this wild violet butter as a spread for biscuits, scones, muffins or toast. Add it to an Easter spread or Mother's Day brunch. If you're fortunate to have ample blossoms [I almost typed ample bosoms] it would be neat to decorate the table with some as well. Start with a good quality salted butter. Typically I buy unsalted butter in bulk, so making compound butters are when I splurge for the single packages of salted butter, and usually a European style butter because it's creamier.

Making compound butters is an easy way to add a bit of flair to a holiday meal.  They keep for several days in the fridge (longer in the freezer, although I've not frozen this type of butter) so you can prepare early for your celebration. In the summertime I'll use an abundance of herbs to make Dill Butter. For Thanksgiving and Christmas I like to serve Cranberry Honey Butter. It's a small addition, but it's a nice touch that makes a special meal that much more special.

The BLUF (military acronym for Bottom Line Up Front) is this is a quick sweet fruit & nut bread that happens to use a pound of pork sausage. Meat and fruit in bread? It sounds crazy--but recall that mincemeat originally contained meat. Honest--you gotta try it! This recipe comes from Ruth Runyan of Oakview Farms. She and her family have been raising hogs in Urbana, Ohio for going on 4 generations now. You can read about my visit to Oakview Farms here. In this post I share how 3,500 Ohio farms raise enough pork to feed 25 million people. That's more than double Ohio's population, but these good folks share with plenty of other states. When you buy pork at the grocery store or farmers market, you are supporting Ohio farm families! (Hey thanks for eating locally and supporting local businesses. It's kind of a thing of mine.)



I was intrigued by the idea of using savory sausage in a sweet bread. After all, I like maple syrup on my breakfast sausage, bacon in my Maple Peanut Butter Bacon waffles, and I have been known to do "quality control" testing on the honey bacon at work. Sweet and savory just goes together. In addition to a hearty breakfast option, this bread can be served as a side dish (like I first tried it, with Perfect Grilled Pork Chops). I suspect it would make a terrific stuffing or dressing alongside a holiday meal. I bet you could even stuff thick cut pork chops with this bread! No matter what your application, it's an unusual recipe to add to your repertoire. One of the great things about root vegetables is that they keep such a relatively long time. Just like the Strategic Winter Squash Reserve in the basement (new and improved with white and sweet potato subdivisions!), root vegetables are an excellent resource for folks trying to eat locally grown foods in the winter months. I'm glad to support farmers who offer extended deliveries after the regular Community Supported Agriculture (CSA) farm share season ends, knowing that for the most part I'll get long-storing vegetables that will see me into the new year.

I've got root vegetables filling up my crisper right now. After the local apples vanished (sad face there, there's nothing like a local apple in terms of flavor) I'd usually transition to crispers full of citrus fruit from the Band Fruit Fundraiser. But seasons change, and your kid who has been in band throughout high school moves on to college where you get to write big checks and not get a case of tangelos in return. So no citrus--right now I've got glorious carrots from the farm share packed into my crisper.

Our Community Supported Agriculture (CSA) farmers over the years have some things in common. One is growing amazing sweet potatoes. It seems every year the size, shape, and sheer number of sweet potatoes in the farm share box increases. No complaints here--just compliments! We went from a family who would occasionally eat sweet potatoes at Outback Steakhouse and Boston Market's Sweet Potato Casserole to a family who enjoys Slow Cooker Sweet Potato Chili and Roasted Sweet Potato Nachos at home.






Since Thanksgiving is all about the side dishes for me, when I planned our Small Batch Thanksgiving I knew I'd be including a version of sweet potato casserole (alongside a full size batch of MA's Make Ahead Mashed Potato Casserole because 5 pounds of mashed potatoes for 3 people sounds about right). I like the Boston Market sweet potato casserole, so I searched Copykat Recipes for a similar one. I changed up the recipe--reducing the butter and sugar, replacing the oatmeal cookie crust with just marshmallows and nuts, shrinking it to fit in a 3 cup baking dish--and made it my own. This was a keeper last year, and will return to the Thanksgiving table this year. Our sweet potatoes in the Strategic Winter Squash Reserve (which accommodates potatoes, onions, and garlic as well as winter squash) are ready to be of service.

Carrots are unsung vegetables. They can hang out in the crisper drawer for weeks before supporting soup stocks or transferring hummus into my face. They are one of the innocuous vegetables to encourage picky kids to eat. Rarely do they get a moment in the spotlight. A few years ago I noticed I'd amassed a bunch of bags of carrots from the Community Supported Agriculture (CSA) farm share, so I celebrated HashtagCarrotWeek and shared a variety of recipes using carrots (breakfast through dinner).

When I got a particularly uniform group of carrots from the farm share, along with yet another bunch of fresh dill, I decided to combine the two in a roasted side dish. Ok, truthfully I tossed in some French breakfast radishes to the roasting pan as well, but this post is about the carrots because they really shined with this treatment. My dad is getting more out of the weekly bunches of radishes, eaten on buttered bread, so I'll leave those to him.



I think these carrots would be a terrific holiday side dish. Since I used olive oil they are vegan, and would be useful if you need a side dish for a crowd of eaters of varying styles. I served mine with roast pork covered in a yogurt/mustard/dill sauce, a quickie version of my Make Ahead Mashed Potato Casserole (with fresh dill added) and the dill on dill action worked nicely. I'm glad to feel a chill in the mornings now that Fall is here--it makes me happy to turn on the oven so I can convert the Community Supported Agriculture (CSA) farm share produce into new and delightful dishes for my family [and new ideas for you!]. For us folks who eat seasonally, the change of season provides a change in the contents of the farm share box--a return of greens plus the arrival of winter squashes in all their glory. The farmer's markets and grocery stores are brimming with gorgeous piles of squash, too.


Winter squash is one of the best parts of joining a CSA farm share. Because these squash can be stored in a cool dry place for months, you can be eating locally grown produce well into the winter. I've even cracked open a butternut squash in April! This is one way I feed my family local produce all year long. I turn a basket-lined bookcase in the basement into the Strategic Winter Squash Reserve, and each week I add all the squash and potatoes from the farm share.  I walk past the SWSR while I'm doing laundry, so it's easy to keep an eye on things.

I feel fortunate I'm getting lots of delicata squash this year. Unlike the other winter squash varieties, the skin on a delicata is edible. That means I get those pretty green and orange stripes on my plate! The first way I ever prepared delicata squash was Alanna's Delicata Squash with Hot Pepper Glaze, and it was a nice spicy change on my Thanksgiving table. Lately I'd been eyeing my delicata hoard and thinking that this roasted dish, with cheese and a bit of a kick, would be a good side dish this Fall. I seem to concentrate on the sides, since I'm always trying to use up all my fresh local produce, and the entrees become an afterthought.

Quick Crispy Sugar Snap Peas

I plant peas each Spring, hoping to get a jump start on the edible goodies coming out of my back yard. I never seem to remember succession planting, though, so I mostly get just a handful of peas harvested at a time. An amount that generally gets snacked on as I walk back into the house.

It's rare for me to get a working amount of sugar snap peas.  Peas are so yummy raw, or dunked in hummus or our favorite Spiced Cottage Cheese Chip Dip that I tend to just eat them that way. In an effort to broaden the family's culinary horizons I've also made a Cold and Creamy Pea, Avocado and Mint Soup--but it turns out that chilled soups are not something the other household residents embrace. All the more for me.

I find the start of each Community Supported Agriculture (CSA) farm share season to be rife with promise. We'll have high expectations to eat ALL THE THINGS and then get bogged down in sheer volume of vegetables.


What helps me the most is to have a few 'go to' methods to deal with different types of produce. For example, when I'm overwhelmed with greens I know I can whip up a Fast Greens & Pasta dish to use up a large bunch in a way my family will enjoy.


I shared last week how I turn to my grill, in the summer, or to my roasting pan (in the Fall when I'm not worried about heating up my house too much) to turn root vegetables into building blocks for future meals.

Today I'd like to share another method--fritters.  I like to fritter away my time in the kitchen. It's much more productive than frittering away my time on Facebook, and the results are far tastier. I've shared several recipes for shredding vegetables to make vegetable pancakes or fritters. One summer standby (that you can make off season if you shred and freeze your summer squash) is my Zucchini Pancake recipe. I've shared a previous plain Turnip Fritter recipe here. I've even waffled up some St Patrick's Day leftovers in my Corned Beef Hash Brown Waffles.

This chive blossom potato salad is as pretty as it is flavorful. When I made my Chive Blossom Focaccia I was a bit bummed that the pretty purple color of the blossoms baked into a more bread-like brown. I figured that adding chive blossoms to a potato salad would look pretty and fresh for Spring, and add that delicate chive flavor to the dish.

We eat a lot of potatoes, so I've shared a lot of potato salads on the blog. I started off with my family's summertime favorite, Confetti Potato Salad. I shared a tangy Roasted Potato Salad with Creme Fraiche. And I got some green beans in on the potato salad action with my Hot French Potato Salad. Add our wintertime favorite Make Ahead Irish Mashed Potato Casserole, and a Colorful Roasted Squash and Potatoes side dish, and I think I've just plotted out my daughter's dream menu plan. She loves her spuds.


Being a seasonal eater, when the weather turns warm I want to eat cool dishes, not heavy baked casseroles. This potato salad fills that need while looking pretty on the table. It's terrific on those Spring days where it's cool in the morning then warm and sunny during the day, making you rethink your dinner plans to something cooler and lighter. Add a salad of fresh greens, maybe some bread and cheese, and you've got a nice Spring meal.

Folks, I've got to level with you. Turnips are something I used to endure about a farm share. I've found that some oil and some cheese make them actually quite delightful, and if you throw bacon into that mix my family gets on board, too.

It's funny how eating seasonally from a Community Supported Agriculture (CSA) farm share broadens your palate. Over the years I've gone from tolerating beet greens to friskily anticipating my first Sautéed Beet Greens with fried egg brunch plate. I've gone from scratching my head at garlic scapes to popping cubes of garlic scape pesto into all sorts of savory dishes like Shrimp and Garlic Scape Scampi.

Turnips have remained a stubborn nut for me to crack, so to speak. I've had plenty of failures (never made it to the blog, occasionally featured on my FB page) trying to find ways to love these frequently-appearing beasts. I may never crave them, but I'm pretty comfortable with getting turnips in the box now. I've got plenty of options in my toolkit (shared on my Turnip Recipes Collection) and am willing to try new things. My latest, not ready for blog time recipe, is using farm share turnips in a homemade Branston Pickle spread. My son loves it, and it's a meatless sandwich spread for him while he works to lower his bad cholesterol and boost his good cholesterol.

Forrest Gump had the way of it. Life--with a Community Supported Agriculture (CSA) farm share--is like a box of chocolates. You never know what you're gonna get. Some things are a given--you won't get tomatoes in May. You won't get corn in October. You will get turnips and beets . . .

Yesterday I learned what would be delivered in the Thanksgiving farm share box. On Tuesday I'll get my fresh turkey and a bunch of veggies. Now that I have a clue what I'll be working with, I can finalize my menu. Of course we'll have potatoes. My kids ask for MA's Make Ahead Irish Mashed Potato Casserole year round. No green beans this year--my spouse and I are the primary eaters of Alanna's World's Best Green Bean Casserole and I just don't have it in me to eat an entire batch alone.

I will make a corn pudding--dairy free and vegetarian--to share with a neighbor who is hosting folks with a variety of special diets. I will use a bag of Multigrain Sourdough Bread cubes from the freezer to make a small batch of stuffing. I've already made a half batch of Apple Cider Beet Cranberry Sauce--substituting dried pineapple for the dried apricots and grated raw beet for the roasted beets--and updated the photos for that post.

I'll need something green, though, and as a salad probably won't happen I plan to make creamed spinach. This recipe, from my 1950 edition of Betty Crocker's Picture Cookbook, listed as Spinach (French method) "makes most anyone enjoy spinach". It's easy to make if you're already at the stove for something else. Last year, when my spouse took the action shots below, I was making Alanna's World's Best Green Bean Casserole and my Apple Sausage Cornbread Stuffing. Why not add a third recipe while I'm multitasking?

The fruit salad known as Ambrosia (in my childhood) or Five Cup Salad (in the deli down the street) is a staple in a side dish spread. While we seem to eat it year round, it often appears on our holiday table. Sometimes we dress it up with maraschino cherries, sometimes we add pecan halves for crunch.

An exotic variation on the traditional Ambrosia or Five Cup Salad--this recipe using Cherimoya in place of pineapple makes this fruit salad extra special for your holiday table.


When I got a box of FreakyFruits from Melissa's Produce last year [yes, I am still sharing recipes from this. I am slow--in the kitchen and on the computer] I consulted my Melissa's Great Book of Produce: Everything You Need to Know about Fresh Fruits and Vegetables (Amazon Affiliate link) for advice with all of the unfamiliar-to-me fruits. The book describes cherimoya like "lizard-green pine cones", with "a leathery skin embossed with scalelike scallops". Yep, that's a freaky fruit.

When I read, "an alluring sweet blend of pineapple, papaya, vanilla and banana flavors" I decided to give the cherimoya a try in our ambrosia recipe, in place of pineapple. Because cherimoya discolors quickly after cutting, I use my favorite trick for keeping fruit looking fresh, pineapple juice (instructions in my Cream Cheese Toffee Dip for Apples).

One of my favorite subjects is food. No surprise there. When I meet someone new, especially someone whose people did not grow up a stove's throw from where we are chatting, I like to ask about favorite foods. 

If you've lived in places far different from where you grew up, I'll ask you about what foods you  remember from your time away. I'm deliberately avoiding use of the term 'exotic' here, because Arkansas and Louisiana are as exotic to me as British Columbia and Nepal.

As I chat with folks about food, I find I am more interested in those comfort foods that we crave, not Your Most Memorable Meal [unless it was memorable because of the warm feelings evoked of good company and good flavors--not dramatic showmanship].

This comforting side dish came about because of a conversation with the guy doing routine maintenance on my furnace. He's from England, living and working as an HVAC technician in the US, and when I brought up what foods he misses most, he said his mom's celeriac mash. He described it as a simple dish of celeriac, potatoes, and carrots. Mashed together with a bit of butter and cream.

I had a Community Supported Agriculture (CSA) farm share celeriac in the crisper and decided to make this for my family. It is simple, homey, humble, unassuming--an excellent addition to a plate of food. Taken by itself it could be considered boring to some, but I don't need my food to be always in my face. This was a nice companion to roasted chicken. It would be terrific in an array of Thanksgiving sides. Leftovers would make a nice crust for an egg casserole, like my Hatch Chile, Egg and Potato Casserole.

Semi Homemade Cranberry Pineapple Pecan Salad

Recipe for a quick and easy 3 ingredient side dish that tastes fresh, sweet, cool and crunchy all at once. Jazz up a can of whole berry cranberry sauce with fresh pineapple and toasted pecans, and perk up your holiday table.


Two things contributed to this cranberry sauce. Neither of them involve beets. Rejoice!
First, I swung by my closest Kroger grocery store during their pre-holiday free sample palooza and tried a taste of cranberry celebration salad. Second, my mom read this post on my make ahead slow cooker cranberry orange and beet salad and suggested I offer up a recipe for doctored up cranberry sauce that starts with a can, not a bag.

To be honest, I'm cool with the can of whole berry cranberry sauce [though the jellied kind icks me out as I did not grow up with it]. I'm game to start out with a bag of cranberries too--though if we're a small amount around the table I don't need that much sauce. I just require demand a small amount of sweet red salad to mix with my mashed potatoes, stuffing, turkey and gravy. [In the same way, I need that dab of lingonberry jam with my meatballs and potatoes at IKEA.]

If you're not into beets yoga using a slow cooker or stove top to make your cranberry sauce but you've got a knife and the ability to toast pecans for a couple of minutes, this is a fast way to dress up a perfectly fine side dish into something even better.

Spicy Korean-sauced Corn & Green Bean Skillet

Moving to Ohio I understood that I'd be living in a more rural area. Shoot, I drive past 3 farms just taking my daughter to sewing school [she made a medieval dress last week at camp--how cool is that?].
This fact reminds me of when I joined the Air Force to see the world. This suburbanite drove past 13 barns (!) en route to work each day. Quite a shift from the beltway and subway commutes I'd been used to, so I'd say I did see more of the world even before moving overseas and deploying.

What I hadn't expected in Ohio, and what was a happy surprise, was all the farm produce that appears every summer in addition to our Community Supported Agriculture (CSA) farm share. There's a wagon with a red striped awning that parks next to a Tim Horton's with produce each week. A flat trailer that appears with corn in a shady area of a strip mall lot. A 'peach truck' I just heard about from a fellow band parent (but haven't seen yet--saving that for next year). And of course our local farmer's market, a few blocks down the street on Saturday mornings. Thanks to these folks I am able to squirrel away plenty of corn for winter while still enjoying some ears fresh.

Grilled Zucchini with Feta

Let's talk about volunteering. I come from volunteers (my extended family calendar even had a theme one year about how we all volunteer). My daughter volunteers with the gardening program of the local historical society and my son volunteers at the library. My spouse volunteers at community clean ups and when someone is deployed. I volunteer on the base, at the school, and in the community.

Volunteering is a value for our family. It boosts our community and ourselves. 


In the garden, squash plants volunteer. They come from our compost. They come from Halloween pumpkins, nibbled by squirrels. They grow in the front yard flower bed, in landscaped areas of the back yard, and in the middle of the patio.

The thing about volunteers is that we need to feel valued. We need to feel our efforts are making a difference in the community, and we want validation for the work we have done.
